Dishing up another family-friendly meal that is easy to prepare and also easy on the budget. Artichoke & Lemon Slow Cooker Chicken is a wonderful meal that not only smells delicious cooking and but takes just a few minutes to get started in the morning.  Better yet, if you’d like to prep ahead of time and freeze like so many of our meals, this recipe is ideal.  

Artichokes and lemons are 2 flavors that blend so well together, they add just enough flavor to the chicken without being overpowering.  Remove the lemon slices before serving, if you don’t think your family will enjoy eating the artichokes, remove them too.  You may be surprised though, they might gobble them right up.

Serve with some yummy pasta salad, mashed potatoes or fresh salad and you’ll have a happy family.

Artichoke & Lemon Slow Cooker Chicken

Prep Time: 5 minutes

Cook Time: 6 hours

Yield: 4 servings

Artichoke & Lemon Slow Cooker Chicken

Ingredients

  • 1.5 lbs. boneless, skinless chicken breasts
  • 1/2 cup onion, diced
  • 1 12oz. jar artichoke hearts (marinated variety, using all the liquid)
  • 1 t. garlic salt
  • 1/2 t. ground pepper
  • 1/2 t. oregano
  • 1 lemon, sliced & seeds removed

Instructions

  1. Spray slow cooker with non-stick cooking spray. Place all ingredients in slow cooker, ending with lemon slices on top. Cook on low 6 hours. Remove lemon slices prior to serving.

Notes

FREEZER MEAL INSTRUCTONS: Place all ingredients (except lemon slices) into gallon-sized resealable freezer bag. Freeze. Place bag into refrigerator overnight prior to placing into slow cooker. Dump contents into slow cooker, place lemon slices on top, cook on low 6 hours.
