I love the idea of an overnight breakfast! How nice is it to wake up to an amazing smelling house and knowing that you have a delicious breakfast waiting for you! So I decided to change up our recipe for Overnight Crock Pot Oatmeal to give it a different flavor – and honestly this tasted SO MUCH like pumpkin pie it was delish!
If you are planning on letting this cook for more than 8 hours, you may want to add some more water to ensure that it doesn’t burn! Otherwise pop this in the crock pot, go to sleep and wake up to YUMMY!
- 2 C pumpkin puree
- 1 Can (12 ounce) evaporated milk
- 2 C milk
- 1 1/4 C water
- 1/4 C sugar
- 1/2 C brown sugar
- 1 tsp pumpkin pie spice
- 1 C steel cut oats (must be steel cut!)
- Combine all ingredients in slow cooker
- Cook on low for 8-9 hours
- Refrigerate left overs
