Well, friends, to say that the last few weeks have been life-changing is the understatement of all understatements. We’ve all had our lives turned topsy turvy in so many ways including preparation of food and shopping.I’ve said it before, I’m frugal and keep a pretty streamlined pantry. Normally I do not purchase more than what my family reasonably uses, bulk purchasing and Costco sized packages aren’t the norm in my house.
Like so many, when our routine shifted to eating at home 3 meals a day, every single day my pantry wasn’t exactly prepared. Not to mention the shift in the shopping. The new motto around here is “you get what you get and you don’t throw a fit” at the grocery store.
Cornmeal was something I could not locate without going into multiple stores, which was not happening. So I found a great recipe in my old papers (you know old school written recipes) that gave us the “feel” of cornbread muffins without corn or cornmeal. Honey Butter Muffins are easy to make and a new family favorite in our home.
Honey Butter Muffins are truly a simple recipe that you can get onto the table in just a short amount of time. Serve them with soups, stews, and chili. My family enjoys them at all times of the day, and I think yours will too.
What ingredients to you need to make Honey Butter Muffins:
- Flour
- Sugar
- Baking Powder
- Salt
- Butter
- Milk
- Egg
- Honey
Some tips for making Honey Butter Muffins:
- I use liners in my pan, makes clean up a snap.
- Spray muffin pan with non-stick cooking spray if you are not using liners.
- Yield is approximately 1 dozen.
- Serve warm if desired with butter and honey.
- Use a scoop for even distribution of batter.
- Spray measuring cup with non-stick cooking spray prior to adding honey for easy cleanup.
Simple steps for making Honey Butter Muffins:
Preheat oven to 400 degrees. Place liners in a muffin pan or spray thoroughly with non-stick cooking spray.
In a large bowl combine together: flour, sugar, baking powder and salt.
In a small bowl combine together: melted butter, milk, egg, and honey.
Combine wet ingredients into dry ingredients. Mix just until blended, don’t overmix.
Using a scoop, fill muffin liners 3/4 full with batter.
Bake approximately 15 minutes until a toothpick inserted into the center of the muffin comes out clean. Cool on a wire rack.

- 1/2 cup granulated sugar
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 cup butter melted
- 1 cup milk
- 1 egg
- 1/4 cup honey
