Grilled Pineapple Cheesecake Parfaits are the perfect summertime dessert! Sweet grilled pineapple is the star of this fantastic no-bake treat.

I’m a dessert girl, no doubt about it. Chances are that if dessert is being offered, I’m readily waving my hand. One thing I really enjoy is a quick and easy no-bake dessert. One that can be whipped up in no time and doesn’t require heating up the oven. Heating up the oven during the hot months…no thank you! My house is designed without any windows in the kitchen, once the heat of summer hits I strategically find ways to prepare meals without using my oven for hours on end.

One helper that I’ve found in my efforts to reduce using my oven during the hottest weeks of the year is by using an indoor electric grill. Just recently I tried the Hamilton Beach Indoor Searing Grill and was really pleased with the results and lack of heat added to my kitchen. The Hamilton Beach Indoor Searing Grill gives me the outdoor grilling flavor right on my kitchen counter-gotta love that! With the adjustable temperature control, I was easily able to control the temperature setting to find just the perfect temp to cook some sweet & juicy pineapple. Plus there’s an indicator light which lets you know when the desired temperature has been reached, no guessing required.

The non-stick grilling surface is large. I could easily cook 4 large burger patties on it or as in this case a large pineapple cut into spears. Within just a few minutes the pineapple spears were nicely grilling, I simply took my tongs and turned them so all sides were nicely caramelized by the grill. Super easy!

Clean up is a snap too! After the grill has cooled completely, remove the lid, plate and drip tray and pop them into the dishwasher. Yes, they are dishwasher-safe! Or give them a good cleaning in the sink, either way, clean-up is easy!

After my pineapple spears were nicely grilled I cut the spears into chunks. An easy no-bake cheesecake filling is one of the layers of this creamy Grilled Pineapple Cheesecake Parfait. Layering crushed graham crackers, the no-bake cheesecake filling and the juice grilled pineapple pieces make a wonderful individual dessert.

Look at those grill marks…mmmm! You can also make this dessert in a bowl by simply layering, it won’t last long though, trust me! Grilled pineapple is so easy, try it in salads, salsas or simply by itself!

Grilled Pineapple Cheesecake Parfait

Ingredients

• 1 pineapple cut into spears
• 1 sleeve graham crackers, crushed

Cheesecake filling:

• 1 3.4 oz pkg Cheesecake flavor instant pudding
• 2 cups heavy whipping cream

Instructions

1. Turn Hamilton Beach Indoor Searing Grill onto 350 degrees. When ready place pineapple spears onto grilling surface.
2. Grill on each side until nicely brown and caramelized. Remove to cutting board and cut into small chunks.
3. For cheesecake filling: use chilled metal bowl and beaters. Pour pudding mix and heavy whipping cream into chilled bowl, beat on high until thick & creamy. Approximately 2 minutes. Will be a thicker consistency than pudding.
4. Layer into glass (or bowl if not making individual): graham crackers, grilled pineapple, & cheesecake filling. Garnish with additional grilled pineapple & crushed graham crackers if desired.
