Grilled Pineapple Margaritas

Welcome back to #SummerGrilling week! We’re heading into the weekend, I hope the weather will cooperate and we can get outdoors and GRILL!!!!

Today’s addition to #SummerGrilling week is perfect for the weekend, Grilled Pineapple Margaritas. Yes, my friends as the saying and the song go “it’s five o’clock somewhere”! 

 

 

Grilled Pineapple Margaritas are fantastic for the hot summer months. They bring a fresh pop of flavor from freshly squeezed lime juice and grilled pineapple

Have you tried grilled pineapple? Oh my, oh my, oh my…it is one of my favorite ways to enjoy my favorite fruit. I simply love the slightly caramelized flavor that grilling brings to pineapple.

 

Grilled Pineapple Cheesecake Parfaits are the perfect summertime dessert! Sweet grilled pineapple is the star of this fantastic no-bake treat.

 

I used my Hamilton Beach® Indoor Searing Grill to grill the pineapple. This grill is one of my favorite small kitchen appliances, I use it at least once a week. It makes grilling indoors so simple and convenient. 

 

Grilled Pineapple Cheesecake Parfaits are the perfect summertime dessert! Sweet grilled pineapple is the star of this fantastic no-bake treat.

 

With a removable grilling surface, cleanup is a snap with the Hamilton Beach Indoor Searing Grill! During the winter months, this grill allows me to grill even when we have 2′ of snow on the deck.  

 

 

Now let me just say, Margaritas are my favorite cocktail. A good Margarita=happy Lori! I’ve enjoyed them in plastic cups on the beach with my BFF, in hand-crafted Margarita glasses and in everything in between. You don’t have to use a Margarita glass to enjoy a Margarita, ‘enuf said. 

 

 

This brings me to my new favorite glasses from Joy Jolt. The Lacey Double-Wall Insulated Whiskey Glasses, they are perfect for enjoying cocktails in the warm weather. Aren’t they pretty?

What do you need to make Grilled Pineapple Margaritas?

  • Grilled pineapple
  • Silver Tequila
  • Triple Sec
  • Lime Juice
  • Pineapple Juice
  • Salt

Some tips for making Grilled Pineapple Margaritas:

  • Fresh lime juice is best, bottled will work though.
  • I used a blender and served over ice. You can add ice and make frozen margaritas if desired.
  • Use a cocktail strainer if you don’t like pieces of fruit in your drink. 
  • Adjust the amount of pineapple juice to make thinner consistency if desired. 
  • This recipe makes 2 cocktails.

 

Yield: 2 cocktails

Grilled Pineapple Margaritas

Prep Time 5 minutes
Cook Time 10 minutes
Total Time 15 minutes

Ingredients

  • 1 cup pineapple, grilled
  • 4 ounce Silver Tequila
  • 2 ounce Triple Sec
  • 1 ounce lime juice, freshly squeezed
  • 6 ounces pineapple juice
  • salt

Instructions

Grill pineapple on all sides and allow to cool completely.

In a blender combine: grilled pineapple, tequila, triple sec, lime juice and pineapple juice. Blend thoroughly.

Serve over ice in prepared glasses.

Notes

To prepare salt rimmed glasses, dip rim of glass in lime juice.

Touch rim of glass to coarse salt to coat edge of glass.
