Lime Sugar Cookies
Does else find themselves making so many cookies during the holiday season that they go on a cookie baking strike for a few months? I’m not the only one right? Well, my strike is officially over, bring on the cookies again!
Today I’m sharing an easy cookie recipe that marries tangy and sweet all-in-one tender cookie. Lime Sugar Cookies are a nice break from my love for all things chocolate. Plus you can whip up a batch in no time!
Have I mentioned these Lime Sugar Cookies are super easy to make, well they are! They begin with a cheater item, but hey this is a no-judgment zone around here. Psst, they begin with an off-the-shelf dry sugar cookie mix.
What ingredients do you need to make Lime Sugar Cookies?
- Sugar Cookie Mix
- Butter
- Egg
- Lime juice & zest
- Turbinado Sugar
Some tips for making Lime Sugar Cookies:
- I used Sugar in the Raw (Turbinado sugar) to roll the dough in, it is chunky and leaves a nice crystal on the outside of the baked cookies. You can use regular granulated sugar too.
- I’ve used both the Aldi brand and Betty Crocker Sugar Cookie Mix, I have had great results with the Aldi version.
- You can find the packaged sugar cookie mix in the baking aisle.
- Freshly squeezed lime juice is best.
- Refrigerate the unused dough between baking times to keep firm.
Simple steps for making Lime Sugar Cookies:
Preheat oven to 350° degrees. Line baking pans with parchment paper. In a large bowl combine sugar cookie mix, softened butter, and egg until combined.
Add the lime juice and lime zest to the dough. Blend in completely.
Place Turbinado sugar in a shallow bowl. Scoop dough using a cookie scoop, place dough ball into the sugar, and roll gently to coat.
Place onto a prepared baking pan, keep 2 inches apart. Bake approximately 12 minutes. Don’t let the edges get browned. Remove from oven and allow to cool 2 minutes prior to transferring cookies to a wire rack for cooing.
