{copycat} Max & Erma’s Chicken Tortilla Soup
A dear friend of mine introduced me to this soup. We don’t have Max and Erma’s restaurants here in Texas but we went on a small road trip to St. Louis and ate at one there.
She made me try their tortilla soup and I fell in love! When I got home I searched online for copycat recipes but all of the ones I came across had cans upon cans of cream of something soups.
Now don’t me wrong, those cans have their place but I don’t like to use 8 of them for one recipe! Then I found this recipe and I knew I had to try it! It’s been a few years since I had the original soup so it may not be an exact match but it is so so delicious anyway!

We live around the corner from a Max and Erma’s and I love that soup too. We tried to recreate it once at home and it was nothing but cream ofs. I am excited to try your version. Also, you may have inspired me to go to Max and Erma’s for lunch today. I will enjoy a bowl of soup for you!

I tried your version of Max n Erma’s tortilla soup and my family just loved it. Even though there is a M n E nearby, so my husband and I can control the ingredients of our favorite dishes at M n E – he is dizbetic and I have to be careful and control or eliminate salt. Agsin thank you for your recipe.
A Question: can you freeze this soup fir later? Can you make the soup a head if time, leave the chicken and tortillas out and freeze the rest of the soup fir later use?

I’ve never been to a Max and Ermas (live in Calif.) but I made this soup and it’s delicious. Added some sweet hot jalepenos and some cilantro and used three leftover chicken breasts from KFC (took off the skin and coating). Will be making again.

Simmer all ingredients except the cheese. Add the cheese at the end
