Cheesecake Bites with Toffee Topping
If there’s one dessert that I have a really, and I mean really hard time passing up it would be good cheesecake. It has to be good though! I’ve always enjoyed cheesecake throughout my entire life, it remains a dessert that is tops on my list of the good things in life.
It is though a rarity that I eat a slice of cheesecake. One, no one else in my house has the same endearing affection towards it, and two, we rarely eat out anymore. So my chances of landing my tastebuds on a decadent slice of cheesecake are few and far between.
So when I can have a bite-sized bit of cheesecake, sign me up. Today I’m sharing a tasty little bit of lusciousness known as Cheesecake Bites with Toffee Topping. Yummy snack-sized cheesecake bites that are covered in chocolate and have a smidge of toffee bits sprinkled on top.
Obviously, these scrumptious little dessert nibbles are great for parties, holidays, or gatherings. But I would be remiss if I didn’t mention these can also be made for your average weeknight dessert. They aren’t complicated so yes, make them often and frequently.
What ingredients do you need to make this recipe:
- Cream cheese
- Powdered sugar
- Vanilla extract
- Chocolate melting wafers

- Refrigerate and freeze for an additional time if the mixture is not solid enough.
- Warm hands will not help, if your hands are too warm when rolling wash your hands in cold water.
Simple step by step instructions:
Line a baking sheet with parchment paper.
Beat cream cheese, powdered sugar, and vanilla extract with an electric mixer, until smooth and creamy.
Form mixture into one-inch balls, and set on the baking sheet.
Freeze for 30 minutes.
Line another baking sheet with parchment paper.
Add the chocolate wafers to a small bowl and melt in the microwave in 30-second increments, stirring between each heating session, until fully melted.
Remove the cheesecake balls from the freezer, and dip them one by one into the chocolate. Then set it on the clean sheet of parchment.
Top with toffee. Refrigerate until ready to serve.
