Slow Cooker Cajun Chicken Alfredo
We’re not eating out nearly as much as we used to. I’ll be honest, I miss it from time to time. Mostly I miss not having to decide what the family will be dining on, what sounds good to me might not sound good to anyone else. Ohh and I miss not having to clean up the kitchen, I miss that part a lot.
When that shift to staying home more and eating in more happened I had to come up with additional meals that weren’t in our regular rotation. Meals that felt a tad more special but still offered easy prep and clean up. Dinners which felt like we weren’t missing out, food that was just a bit more “restaurant” feel.
Slow Cooker Cajun Chicken Alfredo is one of those dishes that found its way into our menu plan and has remained since it is always tasty and is really easy to make. What I particularly love about this dish is that it can be served over rice, noodles or if I’m being a really good eater, zucchini zoodles.
And let me tell you, that Cajun flavor pops with the addition of bell peppers. If you love spice, feel free to adjust to your liking, we keep things a bit more mild at my house.
Now, of course, you can make your own Cajun or Creole seasoning, which I have in the past, and it is great. Prepared spices are perfectly fine too, use whatever you enjoy.
What ingredients are needed for this recipe?
- Chicken breasts
- Chicken stock
- Seasonings
- Cream cheese
- Bell pepper
- Heavy whipping cream
- Parmesan cheese
- Romano cheese
- Cornstarch
- Water
Tips that make this recipe very easy to prepare:
- I like to cut the chicken breasts into 2 or 3 pieces before putting them into the slow cooker.
- Cajun or Creole seasoning can be used.
- Homemade seasoning mix is great too.
- Serve over rice, noodles, or zoodles.
Simple step by step instructions:
Spray the slow cooker with nonstick cooking spray. Begin by placing the chicken breasts in the bottom of the slow cooker, pour chicken stock over the top, and add the seasonings. Place cream cheese on top of the chicken. Add in the bell pepper next. Cover the slow cooker. Cook on high temperature 2-3 hours or on low 4-5 hours.
Remove the chicken from the slow cooker and chop or shred. Whisk the remaining ingredients in the slow cooker to completely combine the cream cheese. Add the warmed heavy whipping cream and the cheeses. Stir to combine. Mix the cornstarch and cold water into a slurry. Pour into the slow cooker until thickened slightly. Return chicken to the sauce.
