If there’s anything I truly strive for during the summer months, it would have to be easy meal options. Meals that will get me in and out of the kitchen in no time. No one wants to spend extra time prepping, cooking, and cleaning when the weather is gorgeous outdoors.
I’m sharing an extremely versatile recipe today that I’m sure you’ll be adding into your regular meal rotation. Buffalo Chicken Meatball Sliders hit the plate and disappear just as fast as you can make them.Sliders are always a popular menu item with my family. We eat them during all sorts of occasions including when a big game is playing on the TV, when we go camping and even on Christmas Eve.
Being nearly bite-sized, sliders make a great portable addition at parties, potlucks, and holiday spreads too. I think you’ll find the combination of handheld and easy to make great for so many occasions.

Some tips for making Buffalo Chicken Meatballs:
- Find ground chicken in the poultry section.
- Use a prepared package of coleslaw mix for the sliced cabbage.
- Any Buffalo sauce of choice can be used.
- To secure the meatball in the slider, use a toothpick.

- Ground chicken
- Frank’s RedHot Sauce or Buffalo sauce of choice
- Shredded cabbage
- Blue Cheese
- White onion
- Slider buns
Simple instructions for making Buffalo Chicken Meatball Sliders:
Mix together chopped onion and ground chicken. Form small balls and place on a prepared baking sheet.
Bake for approximately 30 minutes. Place the meatballs in a large skillet. Top with ½ cup buffalo sauce and simmer for another 5 minutes.
To create sliders, place a small amount of shredded cabbage on the bottom bun, top with meatball, and blue cheese crumbles. (You may want to use a toothpick to hold the top bun in place).
