Yup, I went with a desserty addition because to me brunch needs a touch of sweet. Am I right?

There’s nothing like a sweet coffee cake alongside a great cup of coffee. No matter how big or small your brunch spread may be, a touch of sweet is always welcomed.
What I seem to find is that brunch is a long casual meal, so of course, while winding up the feeding frenzy, it’s nice to have another cup of coffee and something sweet to wrap it all up nicely.
White Chocolate Cherry Coffee Cake is super easy to whip up and can be made ahead of time. You know I love being able to prep ahead of time, that’s the way I roll.
What do you need to make White Chocolate Cherry Coffee Cake?
- White cake mix
- Stonyfield Organic Yogurt
- Eggs
- Almond extract
- Cherry pie filling
- White chocolate chip morsels
- Powdered sugar
- Milk
One of the things that send White Chocolate Cherry Coffee Cake to over the top great status, is the texture. Stonyfield Organic yogurt is the ingredient to thank for that. The texture is transformed from “cake” to tender cake which is simply dreamy.
I love having a container of Stonyfield Organic yogurt within my reach in the refrigerator. There are so many useful ways to incorporate it into everyday recipes, I use it all the time for dressings, desserts, baking, breakfast and snacking. YUM!
Some tips for making White Chocolate Cherry Coffee Cake:
- Spray your pan, I know you know this. It just makes life easier.
- No white cake mix, use yellow, that’s fine.
- No almond extract, use vanilla.
- I used Stonyfield Organic Vanilla lowfat yogurt.
- Add some toasted slivered almonds to the top after drizzling the glaze if desired.
- Cover leftovers, it’ll be great tomorrow too.
White Chocolate Cherry Coffee Cake

Ingredients
Cake
- 1 white cake mix
- 1 teaspoon almond extract
- 3 eggs
- 1/4 cup water
- 1 cup Stonyfield Organic yogurt
- 1 21 oz can cherry pie filling
- 1/2 cup white chocolate chip morsels
Glaze
- 1 cup powdered sugar
- 3 Tablespoons milk
Instructions
Preheat oven to 350° degrees.Spray 13x9 baking pan with non-stick cooking spray.
In large mixing bowl combine first 4 ingredients with electric mixer until well combined.
Add Stonyfield Organic yogurt, blend until combined.
Pour into prepared pan.
Spoon cherry pie filling over top of batter.
Sprinkle white chocolate chip morsels over top of cherry pie filling.
Bake approximately 30 minutes until toothpick inserted into center comes out clean. Allow to cool completely prior to glazing.
FOR GLAZE: Whisk together powdered sugar and milk until smooth. You may need to adjust amount of milk to get consistency desired.
Drizzle glaze over top of cake. Allow to set at least 10 minutes before cutting.
