I love putting dishes in my slow cooker. Especially side dishes during the holidays (whether it’s Christmas or Easter I need all the oven space that I can get – I can’t be alone in this!) Slow Cooker Cauliflower Casserole is perfect for any holiday or just Sunday Family Dinner. It’s easy, and super delicious and goes with any main dish you can serve!

I am admittedly bad with side dishes. Yes for a Holiday I make them, but for dinner? I struggle. I like Slow Cooker Cauliflower Casserole for both occasions. I can whip this up on Monday night and it’s enough for my family to have a few nights of side dish, or I can include this in my Holiday Table and not have to worry about having enough pans/oven space/patience! (you know what I’m talking about right?)

You can have this side dish put together in a snap. I kept my cauliflower in big chunks so not to end up with cauliflower mush, but that is the only trick to this recipe! Your family will love this and you’ll love that you’re giving them a tasty version of such a healthy veggie! Everyone wins for this dinner!

Slow Cooker Cauliflower Casserole

Slow Cooker Cauliflower Casserole


  • 1/4-1/2 C water or chicken broth
  • 2 Heads of Cauliflower cut into big chunks
  • 1 bunch of celery cut
  • 1 onion diced
  • 3 cans of cream of celery soup
  • 1/2 C shredded cheddar cheese (I used sharp)
  • 1/4 C shredded Asiago/Romano/Parmesan cheese (it's a matter or taste - or buy the blend)


  1. Spray your slow cooker with non-stick cooking spray
  2. Pour water into slow cooker to make sure the bottom is covered
  3. Place Cauliflower, onion, and celery into slow cooker
  4. Mix remaining ingredients and spread over top of veggies
  5. Cook on low for at least 4 hours or on high for at least 2 (remember the bigger your chunks the longer it will take to cook - in a hurry? make smaller chunks)
  6. Serve with any meal

Slow Cooker Cauliflower Casserole is fantastic for a nice family or dinner holiday dinner. Easy, tasty & doesn't take oven space thanks to your crockpot.


  1. Trying this with a cream of mushroom because finding cream of anything Gluten Free is hard. Hopefully it tastes as great as this looks.
