Nothing tastes as good as a really flavorful dinner already cooked when I get home from work. Am I alone here? Island Chicken is just that. It’s not fruity island either, it’s just super flavorful and tastes so amazing – of course they’d eat it on an island – I would too!

Island Chicken is the absolute perfect freezer meal – I promise you. It’s even on our 40 meals in 4 hours. I LOVE having my freezer full of dinners just waiting for me to pluck out and throw into the crock pot – you have heard of dump meals right? Island Chicken is a great dump meal. I hate the name, but I love the dumping of a few ingredients into the slow cooker and having a really yummy dinner coming out of it! Minutes I tell you – Minutes to make dinner. That’s my kind of meal.

Being that this recipe is called Island Chicken I like to serve it with some fancy rice and some snow peas or something fun like that. Steam in the bag is easy enough right? Your whole family will love eating dinner with this chicken!

  • 6 skinless chicken breasts
  • 3 T of lemon juice
  • Zest of 1 lemon
  • 2 cloves of garlic diced
  • 2 t of dried oregano
  • 2½ t of soy sauce
  • 1/2 c of vegetable oil
  • 1/2 c of chicken stock
  • salt and pepper to taste


  1. Mix all the ingredients, except the chicken broth in a bowl and marinade overnight.
  2. Pour the marinaded chicken and ingredients into the crock pot, add the chicken stock and cook on high for 4-5 hours

  2. Sounds very tasty and a nice addition to my chicken file. One question about the marinade the chicken has been marinating in – is that added with the chicken and other ingredients for cooking or is the extra marinade tossed out?

  3. When making these freezer meals do you put everything in zip lock bag except for the extra ingredients like this recipe states do not add chicken broth til putting in crock pot

    • For this recipe, I went ahead and added the broth to the freezer bag as well. When it’s a larger quantity (1 cup+), I will wait to add it that morning just for the sake of saving space in the freezer. Hope that helps!

  7. Hi, I’m going to put all of these ingredients together in the freezer for a later date.. Do I combine all of the ingredients and put in a bag to freeze except for the chicken stock or do I add the chicken stock to it and freeze it that way? Thanks:)

  9. This will sound like I’m nitpicking but this isn’t a “meal”. It’s just the chicken. While I love anything that makes life simpler I didn’t see how this one qualified to make this particular list.
    Any side suggestions for an easy complete meal? I’d still like to try it.

  10. This is almost exactly like one of my facorite recipes (lemon garlic chicken) but in mine, the chicken sits doesn’t marinade in the juice, you cook it with the juice in the crockpot then add cream cheese. Sooooooo good over pasta!! I

  11. When making the recipes that have chicken, can I use already frozen chicken? Also, if I freeze these meals, do they need to be thawed out before placing in crockpot?

    • Kim I used frozen chicken breasts for freezer meals – just make sure to pop them out of the freezer only long enough to put them in the bags and then right back to the freezer. If you are using them to make that day – of course you can use them!

  12. I am confused – you say chicken stock and chicken broth – which is it? Is it 1/2 cup chicken broth?

  13. About how much weight would 6 breasts be? I’m thinking these are on the smaller size. We get our chicken from Sam’s and they average 1lb a breast so I’m not sure how much to use.

    • Becky – go by what your family eats. 🙂 I would say if they are not the Sam’s chicken breasts (I know exactly what you’re talking about) I would figure about 1/2 pound per breast – so this recipe (give or take) would be 3 Sam’s breasts 🙂

  14. All I can say is Wow! My husband usually likes everything I make but he could not stop talking about this chicken recipe! Gave it 11 out of 10! 😉 and when I think about how easy it was to prep and throw in the crockpot a few days later, simply can’t beat it! We’ll be trying all the others! 😉

  16. Hi! I’m having trouble knowing how to measure the chicken. I noticed you say “go by how much your family eats”. It’s just me and my husband eating these recipes. Should I include enough chicken for 4 servings? I’ll know how to eye-ball if I know how many people these recipes should serve.
