Slow Cooker Smoked Sausage Cheesy Potatoes
Last year my 9-year-old daughter had a younger teacher in her classroom. So young she could easily have been my own child.
I had some reservations at the beginning of the school year only because my daughter tends to do better with seasoned “been there done that” type of teachers. Well, I’m happy to report this teacher was phenomenal and had a very inspiring approach which has also led to my daughter gaining a newfound love of college football.
Our town is smack dab in the middle of two immensely rival universities, a rivalry which began way back in 1898! Needless to say, when these two teams converge annually for a game, it is a BIG deal in our area.
And when this big game day arrives you know there has to be a spread of food and munchies that rivals the immensity of this momentous game. This is when I head to Meijer and get prepping for some seriously delicious, yet simple to make food and drinks.
Meijer is the perfect one-stop shopping destination where I can pick up exactly what I need to feed hungry fans. Of course, you can pick up game watching essentials such as chips and dips because every good game requires those.
For this particular game, I decided that since it was right at meal time I’d make a heartier slow cooker dish that would satisfy a hungry crowd. I made Slow Cooker Smoked Sausage Cheesy Potatoes, and let me tell you they were gobbled up in no time.
It seems as though everyone has their own version of ‘cheesy potatoes,’ wouldn’t you agree? In fact, I have two or three versions that I use, depending on the occasion. I decided to make this simple dish with frozen, shredded hash brown potatoes.
I also used Eckrich Smoked Sausage, which I sautéed along with some onion to get the pieces nice and browned. Eckrich Smoked Sausage is naturally hardwood smoked and crafted with just the right blend of spices for a truly rich, savory taste. Which makes it a fantastic addition to cheesy potatoes. Also preparing this hearty dish in the slow cooker means I can get it prepped and ready well before game time, then it does its thing slow cooking away.

We’re all set for the big game and you will be too with a hearty spread of delicious food and drinks. Happy to report that my daughter picked the winning team last year, and this year she’s already predicting victory, too.
Funny how teachers can inspire in so many different ways, even ways they probably weren’t expecting to. Even unknowingly transforming students into college football fans!

Ingredients
- 1 14 oz pkg Eckrich Smoked Sausage, sliced into 1/2" pieces
- 1/2 cup onion, diced
- 2 cups shredded cheddar cheese, divided
- 1 can cream of celery soup
- 8 oz sour cream
- 8 oz French Onion Dip
- 1/8 t ground pepper
- 1/4 t Lawry's Seasoning Salt
- 1 30 oz pkg frozen shredded hash browns, thawed
Instructions
- In large skillet cook Eckrick Smoked Sausage and onion. Cook thoroughly & set aside.
- In large mixing bowl combine 1 3/4 cup shredded cheddar cheese & all other ingredients. Mix until combined.
- Spray slow cooker with non-stick cooking spray. Spoon 1/2 of hash brown potato mixute into bottom of slow cooker.
- Next layer on the cooked sausage & onion, spreading pieces evenly.
- Layer on remaining hash brown potato mixture.
- Finish with remaining shredded cheese.
- Place lid on slow cooker and cook on low for 3 hours.

Kendra, For my family it is more of a main dish, pretty hearty! Maybe alongside pulled pork or BBQ you could use it as a side. It really is delicious, enjoy!
