Who doesn’t love Guacamole? I mean seriously – who doesn’t? To me it should be one of the food groups…What could be more glorious than a fresh tasting amazing dip? I can’t wait to show you how EASY this is to make. Don’t be scared you’re going to love this!
Now I love guacamole any way you can have it – but I decided to make Chunky Guacamole a while back and I’ve never looked back. Regular guacamole is fantastic, however Chunky is going to rock your world. You’re going to be amazed how great it is! With the chunks of all the fresh veggies and the cilantro and lime juice? You can’t go wrong.
I use this guacamole for everything. I of course love it with chips – it’s such a guilty pleasure. But when I am on the healthier side (no chips!) I LOVE this on a piece of baked fish or chicken. It really just makes dinner extra special. I could just eat it with a fork – not going to lie. It’s just so amazing.
What are the ingredients you need to make Chunky Guacamole?
It’s very simple to make:
- 3-4 medium avocados (2-3 large)
- 1/2 Red Onion, chopped
- 1 Roma or Plum Tomato – seeded and chopped
- 1/2-1 Jalapeno, seeded and chopped
- Cilantro to taste
- 1 Lime for juice
Making this guacamole is really so simple. When you have fresh tasting ingredients it’s just so easy to make delicious food.
I like to build the guacamole like this – as I’m making it – keep reading you’ll find out why.
Start by placing the chopped tomato, onion and jalapeno in a medium bowl
I like to cut my Avocados while they are still in the skin. I think it makes it easier and less messy.
Take the cut Avocado – I like bite sized pieces but it’s a matter of preference and place it on top of the other ingredients in the bowl.
BEFORE YOU CUT YOUR LIME IN HALF – Roll the lime on the counter for a 10-20 seconds with your palm. This helps get the lime ready to squeeze and you will get the most juice out of your lime!
Squeeze the lime over the avocado. 2 reasons – 1 make sure to get as much as the avocado with as much lime juice as possible. Avocado will turn brown very easily and the lime will really slow it down (I’ve had this last over 8 hours without getting brown because I squeeze the lime so carefully) and 2 we want that perfect lime flavor. if you have to stir JUST the avocado around to make sure it gets hit with the juice!
Add the Cilantro. I use herb scissors to cut it but you could chop it with a knife. Also how much you use is your taste – I’m OBSESSED with Cilantro so I use a LOT

Ingredients
