Lunchbox packing time is here! The kids are heading back to class and mom needs to get organized for daily lunch packing. I want to make sure that I’m packing everything my kids need to enjoy a satisfying lunch while they are away during the day at school.
School days for even young kids are now very long days. If you include the time spent on the bus before and after school some kids are away from home around 8-9 hours. Factor in additional after-school extracurricular activities and the day just gets longer for these growing bodies.

My goal is to send the winning combinations in their lunches and not worry whether or not they are eating what I send.
A well-stocked fridge and pantry are really helpful for packing lunchbox essentials. It helps you quickly gather items together and get those hungry kids fed. I prefer to send them some variety in their lunchboxes including something with protein which will truly tide them over until dinner is served.

In a lunchbox though, I found the mixture became too watery. My solution was to buy a large tub of vanilla yogurt and place a small amount into a reusable container. Into another reusable container, I place cut fruit chunks. The fruit can easily be mixed into the yogurt to make a delicious mixture without becoming watery.

Ingredients
- 1/2 cup vanilla lowfat yogurt
- 1/2 cup cut fruit
Instructions
- Mix cut fruit into yogurt.
- OPTIONAL: Top with granola if desired.
