I’ve spent my entire life in the great state of Michigan, it is truly a majestic state and I’m proud to call it home. There’s a few things you instantly relate with the mitten state as a life-long Michigander. Things which you probably became aware of or were taught about since early elementary school. There’s obviously the unique shape of our state, or using the acronym HOMES (Huron, Ontario, Michigan, Erie & Superior) to remember all 5 of the Great Lakes. Then there’s the autumn tradition of heading to one of the many apple orchards throughout our state and picking orchard fresh apples. During the summer maybe you headed to the National Cherry Festival in Traverse City, and enjoyed freshly picked cherries and festivities related to this amazing fruit. These are all integral parts of our fine state.
Today I’m bringing to you a OH SO SIMPLE dish that encompasses some of these belovedĀ Michigan fruits. Pork Tenderloin with Michigan Cherries & Apples is a meal that you can easily get on the table after a long day. Trust me on this one, it is tasty and fast…gotta love that.
Did I mention this is a ONE PAN meal? Yes, a one pan meal made extra easy using my Lagostina Nera Nonstick 5-Qt. Casserole with Lid. This is one nice pan my friends! Let me share with you why I enjoyed using theĀ Lagostina Nera Nonstick 5-Qt. Casserole with Lid. First I will say I love that this pan is oven and broiler safe to 500 degrees F. This is something that pans I have owned in the past were unable to do and it frustrated me. If I was making a dish and just wanted to brown the cheese on top under the broiler I was unable. Having the ability to go from cooktop to oven to broiler is amazing. Next this one is crucial at my house…dishwasher safe, thank you Lagostina for making quality pans that I can pop into my dishwasher. Happy happy happy over here!

Now back to dinner, I know you want to know how simple it is to make this dish! I used a 1.25 lb pork tenderloin, sliced into 1/2″ slices. Ā Over medium heat I added dried Michigan cherries and apple juice into theĀ Lagostina Nera Nonstick 5-Qt. Casserole with Lid. I stirred and then placed the lid on, letting the cherries simmer a tad and rehydrate in the juice. Next I chopped a Michigan Gala apple into small chunks and threw that in with the cherries. Stirring frequently, the juice will begin to disappear as the apples & cherries soften. Place the fruit into a bowl and set aside. Saute pork tenderloin slices in olive oil in theĀ Lagostina Nera Nonstick 5-Qt. Casserole with Lid, seasoning with salt & pepper. When completely cooked, spoon fruit over top of pork tenderloin slices and enjoy! Great with rice, mashed potatoes or noodles.
