Alrighty, so it’s no big secret we’re HUGE slow cooker lovers here at Who Needs A Cape?, right? We’ve shared so many delicious slow cooker meals over the years, everything from soups and stews to entrees. Today I’m sharing with you a super easy comfort dish, Slow Cooker Creamy Cheeseburger Soup! My family devoured this dish and to be honest I elbowed my way to the kitchen the next day to fight for the leftovers. This is one of those dishes that I could have eaten for 3 or 4 days, but alas it was gone much too quickly.
To me the perfect slow cooker recipe is one that you can’t wait to make again, and let me tell you I’m already popping this one into my meal planner later this month. All the flavors blend so well together. We topped ours with a touch of shredded cheese, a dollop of sour cream and some crisp bacon.
If you have a spicier palate feel free to add in some spice. Perhaps just a dash of Sriracha, or a few shakes of chili powder and you’ll bring out even more flavors in this tasty soup. I kept it mild but my boys always add in a splash of hot sauce to whatever I’m serving and this took the addition just fine. For us this was a wonderful Sunday dinner, I threw everything into the slow cooker late in the morning and then went about out day. I just love smelling soup slow cooking away. Just be sure to give the soup a stir every couple of hours to incorporate the melting cheeses. Slow Cooker Creamy Cheeseburger Soup
Ingredients
- 1 lb. ground beef
- 1/2 cup onion, diced
- 32 oz chicken broth
- 20 oz pkg hash brown potatoes (I used Simply Potatoes)
- 12 oz Velveeta, cubed
- 4 oz cream cheese, cubed
- 1/2 t ground pepper
- 1/2 t salt
- 1/2 t Lawry's Seasoned Salt
- 1/2 t oregano
- 1/2 t garlic powder
Instructions
- Spray slow cooker with non-stick cooking spray.
- Cook and drain ground beef.
- Add all ingredients into slow cooker.
- Cook on low 6 hours, or high 4 hours, stirring occasionally to blend cheese into soup.
Notes
Try spicing this soup up a bit by using some Sriracha or chili powder if desired.

I am relatively new to slow cooking. I have found that if you add all the ingredients in the beginning, the dish tends to come out a little bland. Adding the onion, garlic, spices, etc. toward the end makes the flavors POP. Has anyone else experienced this?
