Slow Cooker Stuffed Pepper Soup is a great alternative to the time consuming stuffed peppers. Delicious & easy dinner that’s also a great freezer meal!
I’m not going to lie – this soup was amazing. Slow Cooker Stuffed Pepper Soup should be put on everyone’s meal list this week! I LOVE the taste of stuffed peppers – but…um…I’m lazy with food sometimes. Stuffing Peppers doesn’t seem like that much fun. I have fallen in love with Lori’s Stuffed Pepper Explosion – because 1 it’s the lazy way to make stuffed peppers and 2 because it’s delicious. This soup? Is another recipe that is going to show up at my house again and again and again!
Best part of the whole plan? I made it in the slow cooker. You guys know how much I love my slow cooker. I did have to brown the meat first, but after that – it was slow cooker all the way.
I am always happy when a dinner comes together so easily. Other best part about the dinner? It’s a GREAT freezer meal. It worked great for that (I have some more in my freezer right now!)

Slow Cooker Stuffed Pepper Soup

Ingredients
- 1 lb ground beef, browned
- 2 green peppers, seeded and chopped
- 2 red peppers, seeded and chopped
- 1 large sweet onion, chopped
- 1-2 Shallots Chopped
- 2-3 minced garlic cloves
- 1 Tbsp Basil
- 1 Tbsp Oregano
- 2 cans diced tomatoes
- 1 can tomato sauce
- 1 can beef broth
- 1 "box" 32 oz of beef broth
- 1.5 C minute rice
Instructions
- Place all ingredients EXCEPT Minute Rice into slow cooker.
- Cook on low for 6-8 hours
- For the last 30 minutes of cooking add in rice, stire and close lid (30 minutes should be enough, but test the rice before serving)
- If Freezing
- Place all ingredients EXCEPT Rice and 32 oz of Beef broth into freezer bag.
- Freeze
- Thaw in fridge overnight and place in slow cooker in the am with the beef broth and follow above cooking directions

All cans (unless noted) are in the 14-16 ounce range
My oldest does not like minute rice at all, do you think I could add in the long basmati rice a little earlier? Thanks, we are having a baby real soon and my oldest will be helping with good dinners big time when he comes. I’ve written down a lot of your recipes for the freezer cooking so far!
