This amazing Cranberry & Caramelized Onion Cheese Spread will make a wonderful addition to holiday feasts.  With the flavors of fall it blends well with standard holiday menu items.

What I like about dips and spreads is the fact you can prep ahead of time and bring out to serve when you need them. The cranberries and caramelized onions give it a bit of sweetness while the blue cheese packs a tiny pungent punch. Grab your favorite hearty cracker or crostini this will be a new favorite!

Cranberry & Caramelized Onion Cheese Spread

Cranberry & Caramelized Onion Cheese Spread

Ingredients

  • 1 8oz package cream cheese, softened
  • 4 oz package blue cheese, crumbled
  • 1 cup sharp cheddar cheese, shredded
  • 2 T butter
  • 1 medium sweet onion, quartered & thinly sliced
  • 1 t sugar
  • 1 cup fresh or frozen cranberries
  • 1/4 cup sugar
  • 1/4 cup water
  • 1 T balsamic vinegar

Instructions

  1. In mixing bowl, beat together softened cream cheese & blue cheese. Stir in shredded cheddar cheese. Spread onto serving platter, cover & refrigerate.
  2. Melt butter over medium heat in large non-stick skillet. Add onion & cook 3-4 minutes until tender. Add sugar, reduce heat to medium-low and cook approximately 10 minutes until onions are soft & golden. Set aside.
  3. In same skillet, combine cranberries, remaining sugar and water. Cook over medium heat approximately 5 minutes or until cranberries pop open & mixture thickens, stirring occasionally. Stir in vinegar and onions. Let mixture cool slightly.
  4. To serve, bring cheese spread to room temperature, spoon cranberry mixture over cheese spread. Serve with crackers, crostini or bagel chips.
