Oh I do hope you add this too one of your up and coming menus … my husband and I are going to try the 20 meals .. since it is just me and him . it will feed us twice .. I will have it for lunch the next day at work 😀
my husband is disabled and does most of our cooking now .. ladies he is actually a great cook and has even learned how to make cordon bleu from scratch and a really awesome homemade or remade spaghetti sauce.
Are you going to put some recipes with shrimp in any of your new menus? If you do I would certainly love it!
Lori
Sounds like your hubby is a keeper! I have plans for a Shrimp with Lemon Angel Hair Pasta, it’ll be rolling out sometime soon, keep checking back! And let us know how you enjoy the 20 Meals!

Agree with Lori – loving your husband!
And yes – seafood is something I need to start working with soon – and Lent is just around the corner (we do meatless Fridays in Lent) so stay tuned!!!

Any idea for a substitute for the diced tomatoes? What if I don’t add cream cheese? My husband doesn’t like it.
Lori
I’ve never made the dish any other way than the recipe lists. Personally I love roasted red peppers, so I could imagine substituting the diced tomatoes for some of those. As for eliminating the cream cheese, it will most likely just result in a less creamy dish. Let us know how it turns out!

Could you do this as a freezer crock pot meal and throw everything into a bag and freeze?
Lori
Kelly, I’m sure you could although I haven’t personally tried. I would suggest browning, draining & cooling the sausage prior to freezing. Cream cheese goes in towards the end, so don’t freeze that. Let us know how it turns out. 🙂

I was wondering if I could use fresh pasta instead of frozen? I imagine I wouldnt need to cook it as long?
Lori
I would try adding it in at the end of the cooking time, maybe an hour before.
Brittany
Can I use fresh spinach?
Lori
Brittany, I’m sure you can, I have not tried personally. Maybe add closer towards the end of the cooking time. Hope you enjoy!
Catherine
Not sure what I’m doing wrong, but I’ve made this three times and, while it’s very good, it always comes out soupy. Still, great recipe!
Lori
Hi Catherine, I’m not sure about the consistency, maybe cut back a bit on the chicken broth of if you spinach is thawed perhaps blot off the excess water.

I made this for Supper last night. I added a 10 oz pkg of chopped spinach, excess liquid squeezed from it. It was delicious! Thank you. I’m definitely going to keep this recipe. Yummo!!!
