Taco Pasta Salad
There are certain foods to me that no matter what time of year it is I crave. Pasta Salad is one of those foods for sure for me. I can eat it when it’s 20 degrees out even though in my head it’s a summer/fall food. One of the reasons that I came up with Taco Pasta Salad is that it’s a Pasta Salad I feel is appropriate for all year. Sad? Maybe – but I truly just LOVE Pasta Salads! You guys are going to gobble up this version for sure!
My family LOVES taco night. How about yours? We have Chicken Tacos, Beef Tacos, Taco Salad I mean the list is endless. And now we have Taco Pasta Salad. See how it’s working here? Two of my favorites combined into 1 SIMPLE dish.
We have used Taco Pasta Salad as our main and as a side dish. It’s fantastic with burgers and hot dogs or on its own. You’ll be the hit of any potluck or picnic. I mean you guys – this is the best dish! PLUS as football season is coming around…this is fantastic tailgating food whether you’re at home or in the parking lot of the game! YEA!
Ok, I really love this pasta salad and you want one more reason? It’s SO easy. I bought the fresh salsa (or pico de gallo) and there was nothing for me to cut up. I kind of love that – especially when life is in a hurry! (which let’s face it it’s a lot of times in a hurry!).
So we have it all here – it’s delish, it combines two of my favorites, it’s easy and you can serve this to ANYONE and have them love it.

Ingredients
- 1 box of shell pasta cooked and cooled
- 16 oz sour cream
- 1 package of taco seasoning
- 1.5 C Pico De Gallo (Or Fresh Salsa)
- 1.5 C shredded Mexican Blend Cheese
Instructions
- Mix sour cream and taco seasoning together
- Stir mix in with pasta
- Add in pico de gallo and cheese
- Let sit in fridge at least 1 hour before serving
- Serve with additional salsa and cheese if desired

I just made this and while the flavor was good, it turned out dry. The pasta just sucked up the sour cream. Next time I would use less pasta and/or add a little mayo to keep it creamy. Otherwise, it was good!
