Fiesta Beef Soup is perfect for this fall and winter!  The spicy flavors will keep you warm for sure!

As a warning – this makes a LOT of soup.  Either half the recipe, or freeze half of it (BEFORE you add the rice – add the rice when you re-heat the soup).

I definitely was inspired by Who Needs a Cape’s own Lori.  She made Slow Cooker Fiesta Chicken Soup – that soup is one of my favorites!  I made it when I made 20 meals in 2 hours (check that out too).  I didn’t use the slow cooker for this one, but the taste is just as good!

Fiesta Beef Soup

Yield: Serves 8-10

Fiesta Beef Soup

Ingredients

  • 1 lb browned ground beef
  • 1 bunch of celery chopped
  • 1 16 ounce jar salsa verde
  • 2 32 ounce containers of beef broth
  • 3 C water
  • 2 10 ounce can of original Rotel diced tomatoes
  • 2 14.5 ounce cans of stewed tomatoes
  • 1 14.5 ounce can of diced tomatoes
  • 2 15 ounce cans of corn
  • 1 C uncooked 5 minute rice

Instructions

  1. Place all ingredients - except rice - into large pot
  2. Bring to a gentle boil
  3. Boil for approximately 1 hour (or until celery is tender)
  4. If freezing part of your soup - pull that out here and freeze
  5. Add in 5 minute rice and serve
  6. Freezer Meal/Slow Cooker Instructions
  7. Brown Beef
  8. Place all ingredients MINUS RICE into Freezer Bag and Freeze
  9. Thaw partially overnight in Fridge
  10. Place in Slow Cooker and cook on low for about 6 hours
  11. Add in Rice and cook 1 more hour (or until Rice is done)
