How to Freeze Zucchini
Zucchini is overrunning my garden. It seems every day I go out to check on the garden I find at LEAST 2 fully grown zucchini.
I have made everything that you can imagine with zucchini, and honestly, I am a little sick of them. I keep having nightmares of giant zucchini’s chasing me.
I have given zucchini to my mother-in-law and have sent them to work with my hubby. Short of going door to door and dropping them off anonymously, I had run out of ideas of what to do with the invasion of zucchini. Then my mom told me I could freeze them. Well Duh! Such a great simple idea.
I decided to write up a quick tutorial on How to Freeze Zucchini. I hope if you have an abundance of zucchini you will freeze them for later. I am sure when winter arrives I will be in the mood again for zucchini anything and everything.
How to Freeze Zucchini:
1. Pick zucchini, wash and dry. Cut in half and scrape out seeds.
2. Either using a cheese grater or a food processor grate the zucchini as small as possible.
3. Place 2 cups of shredded zucchini in freezer bags. Freeze for later!

Hi! Does this freeze any better if you squeeze all the excess water out?

Hey Vikki. I am not sure how it would do if you squeeze the excess water out before freezing. It would probably be fine either way though. I chose to just throw them in the freezer because I was sick of zucchini.
