Lemon Cream Cheese Cake Mix Cookies
So I had a huge bag of lemons just sitting on my kitchen counter staring at me. First thought was, hey how about making a Lemon Blueberry Loaf, my kids gobble that up every time I make it. Go to the fridge, check the status of the blueberries I’d just bought the day before, and they are gone. Kids devoured them and I didn’t even know.
Plan B was to make a Lemon Crumb Loaf, another family favorite. Only to realize I was out of evaporated milk. Oops! Now onto Plan C which was actually quite a win. The cookies I’m debuting today turned out to be delicious and approved by not only my youngest girls and hubby but my daughter and son in law who stopped by just as I was done baking them.
Ultimately, the pivot to a lemon cookie shouldn’t have been a surprise to me. We’d stumbled on a lemon cookie at Aldi a few weeks back that is delicious and we’ve gone through quite a few packages. A lemon cookie baked at home…bonus!
Lemon Cream Cheese Cake Mix Cookies are unbelievably tender and irresistible. The basis of this “cheater” style recipe is so simple, it begins with a white cake mix, butter, cream cheese, egg, and freshly squeezed lemon. That’s it my friends!
I adore the pop of flavor, and these cookies do not disappoint. There’s even a wee bit of lemon zest in them for that extra zing of lemon flavor. Cream cheese is the addition that makes the cookies oh so tender and light. The white cake mix is the ingredient that makes this recipe a snap. One that you can whip up in no time. There’s minimal measuring which also makes this a great recipe for kids to help make.
What ingredients do you need to make Lemon Cream Cheese Cake Mix Cookies?
- White Cake Mix
- Butter
- Cream Cheese
- Egg
- Lemon Juice & Zest
Some tips for making these cookies:
- I used freshly squeezed lemon juice, which allowed me to zest the lemon for the recipe.
- 10 minutes of baking is the magic time for my oven, I estimate most cooking times will be between 9-11 minutes.
- The bottom of the cookies should be lightly browned when you remove them from the oven. The tops should not be browned.
- If desired, allow the cookies to cool and sprinkle with powdered sugar.
- Store in a resealable container after cooled.
Simple steps for making this recipe:
Preheat oven to 350°. Prepare baking tray lining with parchment paper or silicone baking mat. Set aside.
In a mixing bowl combine softened cream cheese and butter. Beat until fluffy using an electric mixer.
Add in the egg, beating until combined. Next, add in the lemon juice and lemon zest, mix until incorporated.
Pour in the white cake mix, mix until combined.
Using a cookie scoop, scoop onto the prepared baking tray.
Bake approximately 9-11 minutes, just until the edges are firm. The cookies may appear underbaked, which is simply due to the texture. Remove from oven and allow to cool completely on the baking pan prior to storing or serving.
