I don’t know about you, but as around here as soon as the calendar rolls around to summer we’re on the go! I’m not complaining though because after such long winters in Michigan I love taking full advantage of the warm weather months.

My kids are getting bigger, so they need something more substantial. An “almost meal” that will fill them up. 

 

This is when a quick recipe like Cheesy Artichoke English Muffins is the perfect solution. They are easy to make and full of flavor. 

Cheesy Artichoke English Muffins begin with Thomas’ English Muffins, a true family favorite. We buy these at Walmart almost every shopping trip and enjoy them so many different ways.

 

Thomas’ English Muffins aren’t just for breakfast! With its nooks and crannies texture we all know and love, they are ideal for so many recipes. 

 

 

I begin this simple recipe with toasted Thomas’ English Muffins. A savory and cheesy mixture is made with cream cheese, Feta cheese, chopped marinated artichoke hearts, and roasted red bell pepper.

 

 

This mixture gets spread on top of the toasted English muffins and sprinkled with a touch of parmesan cheese. I pop them into the oven for a couple of minutes and that’s it!

Cheesy Artichoke English Muffins

Total Time 10 minutes

Ingredients

  • 2 whole Thomas' English Muffins, toasted
  • 4 ounces cream cheese, softened
  • 2 ounces feta cheese, crumbled
  • 2 Tablespoons marinated artichoke hearts, chopped
  • 2 Tablespoons roasted red bell pepper, chopped
  • 2 Tablespoons parmesan cheese

Instructions

Toast the 4 halves of the Thomas' English Muffins. Set aside.

Preheat oven to 375° degrees.

In small bowl combine: cream cheese, feta cheese, artichoke hearts and roasted red bell pepper. Mix together.

Spread mixture onto toasted English muffins. Place onto baking tray.

Sprinkle with parmesan cheese.

Bake approximately 5 minutes until cheese is melted.

Notes

I broiled for a couple of mintues after cooking time to brown cheese a touch.
