Cajun Chicken Meatballs in Cajun Cream Sauce
Let me tell you friends this has been a long couple of weeks here in Michigan. You’d think we’d be pros at dealing with winter and everything that it hands to us, we really should.
We had such an easy beginning to winter that when it did find us, it hit hard. In the course of three weeks, my kids had 7 “inclement weather” days.Everything hit us from snow to ice to the dreaded “Polar Vortex”, which I hope to never experience again, it was brutal. What this means is that we’ve spent a lot of time in the house and craving comforting dishes.
This brings me to the very latest edition of FREAKY FRIDAY, and one comfortingly delicious recipe!!! If you’ve been a follower for some time you may be familiar with Freaky Friday. If not allow me to give you the details.
We get together with some of our blogging friends, a date is chosen and each blogger is assigned another blogger from the group. You pick a recipe from their website to remake for your blog and then there’s a big reveal on Freaky Friday.
The fun part is you keep everything secret, Shhhh! No one knows who is assigned who (except for our fearless leader Michaela who runs An Affair From the Heart) and doles out our assignments.

This is my first time being assigned to this amazing site. Lemon Blossoms is the brainchild of Kathy, who is one talented lady. I was a bit intimidated when I received this assignment. Kathy has some serious kitchen skills having graduated from culinary school working for The Food Network and for Chefs Wolfgang Puck and Bobby Flay.
As I perused the recipes on Lemon Blossoms I found Kathy’s recipes to be approachable. There was no reason to be intimidated with her easy to follow directions. Some of the recipes that certainly caught my eye were delicious posts such as Creamy Shrimp Scampi Dip, Instant Pot BBQ Brisket, and Cuban Mojo Chicken. Be sure to check out her site, you’ll find all sorts of amazing recipes that you’ll want to try.
Ultimately I chose to make her Cajun Chicken Meatballs in Creamy Sauce. Not only are they delicious, but this is also a one-pan meal…winner winner!

This recipe begins with ground chicken which gets blended with some traditional meatball components such as egg and Panko breadcrumbs. Add in some additional flavors like Cajun seasoning and you have some tasty meatballs.
The meatballs on their own are amazing but wait, we aren’t done! Add to them a simply scrumptious creamy sauce which coats the meatballs, sending their level of delish over the top. YUM!
What do you need to make Cajun Chicken Meatballs in Cajun Cream Sauce?
- Ground chicken
- Panko breadcrumbs
- Cajun seasoning
- Fresh parsley
- Parmesan cheese
- Garlic
- Egg
- Cream
- Chicken broth
- Onion
- Bell pepper (see below)
Some tips for making Cajun Chicken Meatballs in Cajun Cream Sauce:
- Use a scoop! I used a 1″ and then hand rolled after scooping to finish shaping the meatballs.
- Big family? Double the recipe, this served 4 in my house.
- Use low-sodium chicken broth to reduce the chance of an overly salty dish.
- Serve over rice or Angel Hair pasta.
There are two changes that I made to Kathy’s original recipe. Remember the weather issues I stated above? Well, I mistakenly forgot to purchase red bell pepper on the day I was taking final shots of this post. Ice was an issue on the roads and I was not going back to the store.
I resorted to substituting jarred roasted bell pepper and the result was AMAZING. As a matter of personal preference, I am listing roasted bell pepper in the recipe below. Use what your family likes, they will turn out amazing either way.
The other change I made was using less Cajun seasoning based upon her notes within her original recipe. I did this for a couple of reasons, namely reducing the amount of sodium and “heat”. My younger kids gobbled these up, no issue being too spicy.
Make these…trust me, they are simple, delicious and have just the right amount of kick! My 10 yr old has already requested I prepare them again and I agreed wholeheartedly. Thank you Kathy!

Deliciously simple Cajun Chicken Meatballs in Cajun Cream Sauce is a hearty meal the family will love. This one-pan meal tastes great over rice or pasta.
Ingredients
Meatballs
- 1 1/2 pounds ground chicken
- 2 garlic cloves, minced
- 1 egg, whisked
- 1/2 cup Panko breadcrumbs
- 1 Tablespoons Cajun seasoning
- 1/4 cup Parmesan cheese
- 2 Tablespoons parsley, chopped
- 2-3 Tablespoons olive oil
Sauce
- 2 Tablespoons butter
- 1/2 cup onion, finely chopped
- 1/4 cup roasted bell pepper, finely chopped
- 2 Tablespoons flour
- 1 Tablespoon Cajun seasoning
- 1 1/2 cups low sodium chicken broth
- 1/2 cup heavy cream
- 2 Tablespoons parsley, chopped
Instructions
Meatballs:
- In a medium bowl mix together: ground chicken, garlic, egg, Panko breadcrumbs, Cajun seasoning, Parmesan cheese and chopped parsley. Mix just until well combine.
- Form into meatballs (about 1-inch in diameter) either by hand or by using a scoop.
- In a large skillet heat 1 tablespoon of oil over medium high heat.
- Add the meatballs. Brown the meatballs on all sides, until all the meatballs are golden brown.
- Remove the meatballs from pan and place on plate.
Sauce:
- In the same pan, melt the butter over medium low heat.
- Add the onions and cook stirring often until they become translucent. Add the roasted bell pepper and cook for another 2 - 3 minutes.
- Whisk in the flour and cook stirring constantly for about 2 - 3 minutes.
- Add the chicken broth slowly, whisking constantly until it thickens a bit. Add the Cajun seasoning and mix well.
- Return the meatballs to the skillet and reduce the heat to low. Simmer for approximately 8 -10 minutes or until the meatballs are cooked through.
- Stir in the heavy cream and turn off the heat, sprinkle with the chopped parsley prior to serving.
Notes
- I used a 1" scoop and then hand rolled after scooping to finish shaping the meatballs.
- This recipe makes approximately 24 meatballs.
- Cook meatballs in batches to avoid overcrowding.
- Use low-sodium chicken broth to reduce the chance of an overly salty dish.
