Cheez-It Fiesta Baked Chicken
Are you stuck in a rut with your dinnertime menu? As much as I’m online looking at food, you’d think this wouldn’t be an issue…but yet it is. So when a new family favorite comes my way I’m always excited to share it with our followers since I know that you are probably looking for new additions to your menu rotation too. I found this new family favorite as part of an ongoing blogger event that we participate in known as FREAKY FRIDAY!

Today I’m debuting my assigned blogger: Candi from The Devilish Dish! Candi is a busy lady living in good old Oklahoma who shares recipes that tickle her fancy. There’s no calorie counting allowed on Candi’s site (love that)! While pursuing Candi’s expansive recipe selection I was drawn towards a couple of yummy recipes including: Orange Julius Fruit Dip, Lincoln County Biscuits and especially Greg’s Party Potatoes . In the end, I chose to make her Cheez-It Fiesta Chicken for a couple of reasons. I’m always looking for new ways to prepare chicken and I don’t know anyone who loves Cheez-It crackers more than my husband. Trust me when I say there is ALWAYS a box of Cheez-It crackers in our pantry…always! So when I saw her recipe, I knew I had to try it.
Cheez-It Fiesta Baked Chicken is my version of Candi’s recipe, with just a couple of minor changes. I liked the idea of baking the Cheez-It crusted chicken and then adding the sauce and cheese at the end so there was still a bit of a “crunch” from the crackers.
The sauce and cheese get broiled on top of the baked chicken pieces resulting in a wonderful meal. The sauce has diced green chilies, adding the nicest flavor to the salty, crunchy flavor from the Cheez-It crackers. I topped our chicken breasts with some shredded Monterrey Jack cheese and they were YUM!
Serve with some Spanish rice, black beans or a simple salad. And since we aren’t counting calories with this dish, why not serve a Margarita too? Be sure to scroll all the way down for a list of ALL the yummy treats from our fellow bloggers, I’m sure you’ll find a few new faves to try!
