Make a Strawberry Bellini for all your brunches, lunches and get togethers! This is a drink that is easy to make and will wow your friends with it’s taste!

Strawberry Bellini could also be called a Strawberry Peach Mimosa.  And maybe I should have.  Bellini is actually very sensitive to some – they think it should NOT EVER use champagne but only a sparkling Italian wine (so…what most of us would just go ahead and call champagne) and freshly pureed white peaches.  Well…meh.  I call it a Bellini when it has something sparkly and some peach nectar.  And I just think it’s a great name for a cocktail right?

Anyways, a Strawberry Bellini is a really tasty drink.  It can (and should) be used for brunches, showers, a special occasion, or anytime you want to have a really nice flavored drink!

One more thing – if your kids want to get in on this (My boys love a fancy drink!) use gingerale instead of the champagne!  They will love it!

Yield: 6-8 cocktails

Strawberry Bellini

Ingredients

• 1 C fresh whole strawberries
• 1 C peach nectar
• Champagne (or for non-alcoholic version GingerAle)

Instructions

1. Blend together strawberries and peach nectar in blender until strawberries are well pureed
2. Fill each champagne glass 1/4-1/3 of the way with fruit mixture
3. Top with champagne (or gingerale)
4. Serve immediately
