Fiesta Beef Soup is perfect for this fall and winter! The spicy flavors will keep you warm for sure!
As a warning – this makes a LOT of soup. Either half the recipe, or freeze half of it (BEFORE you add the rice – add the rice when you re-heat the soup).
I definitely was inspired by Who Needs a Cape’s own Lori. She made Slow Cooker Fiesta Chicken Soup – that soup is one of my favorites! I made it when I made 20 meals in 2 hours (check that out too). I didn’t use the slow cooker for this one, but the taste is just as good!

Fiesta Beef Soup

Ingredients
- 1 lb browned ground beef
- 1 bunch of celery chopped
- 1 16 ounce jar salsa verde
- 2 32 ounce containers of beef broth
- 3 C water
- 2 10 ounce can of original Rotel diced tomatoes
- 2 14.5 ounce cans of stewed tomatoes
- 1 14.5 ounce can of diced tomatoes
- 2 15 ounce cans of corn
- 1 C uncooked 5 minute rice
Instructions
- Place all ingredients - except rice - into large pot
- Bring to a gentle boil
- Boil for approximately 1 hour (or until celery is tender)
- If freezing part of your soup - pull that out here and freeze
- Add in 5 minute rice and serve
- Freezer Meal/Slow Cooker Instructions
- Brown Beef
- Place all ingredients MINUS RICE into Freezer Bag and Freeze
- Thaw partially overnight in Fridge
- Place in Slow Cooker and cook on low for about 6 hours
- Add in Rice and cook 1 more hour (or until Rice is done)
