Raspberry Daiquiri Pie
We made it, we really did! Spring finally found Michigan! Let me tell you friends there were a few weeks there where I was fairly certain we’d be wearing winter boots and coats until June.
This was the longest winter I can ever remember in all of my years. What I kept reminding myself was that once spring finally arrived I was going to appreciate it wholeheartedly. And I most definitely am!Spring means we can actually see our BBQ grill again, (no really the snow finally melted). We can also get outdoors and enjoy beverage around a bonfire in the evenings too. It also means enjoying all the beloved tastes of the warm seasons.
The arrival of spring also brings us to the next round of a blogging event known as Freaky Friday! If you’ve been a follower for some time you may be familiar with Freaky Friday. If not allow me to give you the details.
We get together with some of our blogging friends, a date is chosen and each blogger is assigned another blogger from the group. You pick a recipe from their website to remake for your blog and then there’s a big reveal on Freaky Friday.
The fun part is you keep everything secret, Shhhh! No one knows who is assigned who (except for our fearless leader Michaela who runs An Affair From the Heart) and doles out our assignments.
So, here we go friends. This round I was assigned:
Hostess at Heart
This is a wonderfully tasty blog run by Julie who lives in Nebraska. She loves to share deliciously simple recipes with ingredients that are in season or easy to find. I love that!
The “hostess” part of Julie’s title is from the fact that she enjoys cooking for family and friends! Many of her recipes are ideal for hosting your own party, so start browsing!
When I was scrolling through her recipes there were so many I want to try such as Zesty Garlic Summer Sausage Eggrolls, Decadent Chocolate Caramel Baileys Mini Cheesecakes, and her Magic Margarita Pie!
Ultimately though I chose to make a different boozy pie from her site, the amazing Raspberry Daiquiri Pie. It’s a fruity, creamy, boozy treat! Enough said!
Raspberry Daiquiri Pie is ideal for the warmer months, it is nearly a no-bake pie. I used prepared frozen pie crusts which only take 10 minutes to cook. So the kitchen stayed nice and cool. If you really want to make this no-bake you can use a prepared graham cracker crust too, which requires no cooking at all.
The basis of this pie consists of just a couple of simple ingredients whipped together. To make your pie boozy you’ll need rum, YUM!
If you choose to omit, you’ll never miss it. In fact, this recipe makes enough filling for two pies, you can always have one boozy and one without. Pie for everyone that way!

I do hope you give this Raspberry Daiquiri Pie a try, it was a huge hit here. The only change I made from Julie’s original recipe was that I added a layer of seedless raspberry preserves to the crust prior to adding the filling.
We’re big raspberry fans around here! You can definitely see the layer of raspberry preserves in the picture below. Note: I’m not a great pie cutter, obviously!

Raspberry Daiquiri Pie
Raspberry Daiquiri Pie brings the best of dessert and a cocktail to your plate! Fruity, boozy, creamy and so easy to make! You'll love this treat!
Ingredients
- 8 oz cream cheese, softened
- 14 oz can sweetened condensed milk
- 6 oz frozen limeade concentrate, thawed
- 1/3 cup light rum
- 8 oz carton whipped topping
- 1/2 cup plus 2 T seedless raspberry preserves
- Frozen pie crusts, baked according to package directions
Instructions
- Prepare frozen pie crusts according to package directions, allow to cool completely.
- Using an electric stand mixer beat cream cheese until light and fluffy. Add in sweetened condensed milk, limeade, and 2 T of preserves.
- Beat until completely blended.
- Add rum and mix thoroughly.
- Fold in whipped topping.
- Microwave 1/2 cup preserves for approximately 20-25 seconds until it become slightly liquified. Stir and pour over prepared crusts. Place in freezer for 5 minutes.
- Spoon prepared filling mixture into crusts. Smooth top.
- Chill for 4 to 6 hours until firm.
- Garnish as desired with whipped cream, fresh raspberries & lime slices.
Notes
This will make 2 regular sized (not-deep dish) pies. Use prepared graham cracker crusts if you prefer a 100% no-bake pie. Omit rum if desired. Refrigerate remaining portion after serving.

You read my mind about having it be completely no bake as I was going to ask if you thought it would work with a graham cracker crust. Its been in the 90’s here in California… so the cool daiquiri pie sounds heavenly!

My pies are in the fridge now but I’m a bit skeptical about them setting up. The filling was very loose (and I even held back some of the sweetened condensed milk fearing it would be too liquid-y with the full can). Anyone have trouble with the pies setting up??
