Yup, I’m ready for summer food. I laugh at myself at the turn of every season…I get so excited to go to the next “food”. Weird? I don’t know. I don’t make a lot of chili in the summer, or eat Apple Pie in May (I have done both and it’s fine – it’s just not my norm), but I LOVE LOVE LOVE a good summer pasta salad. Actually, Pasta Salad maybe one of the “summer” foods I do eat all year because it’s so delish. I was ready to try a new pasta salad so I combined two of my favorite things – a Chicken Club Sandwich and Pasta Salad and came up with Chicken Club Pasta Salad! YUM!
I simply can’t get enough of Chicken Club Pasta Salad. I’m giving my husband my recipe so he can make it for Mother’s Day for me! Yes I love it that much! It just has an amazing flavor and it’s not hard at all to make – so it’s perfect. Plus, when I get hot? I do not want a hot meal every night – I love having Pasta Salad for dinner – not just as a side.
I’m getting ready to dust off our grill are you guys? Chicken Club Pasta Salad was originally made with oven baked chicken breasts, but it would be awesome with grilled chicken breasts as well. As long as you have the grill out right?
I also used Thousand Island Dressing instead of traditional mayo. If you really wanted your club “sandwich” to stay traditional you could most certainly use mayo and add in some bits of romaine, but I have to tell you – Chicken Club Pasta Salad is pretty much perfect in my eyes already 😉 You’re going to love it – and so will everyone you serve it to! SO GOOD!
