Applesauce Muffins with Streusel Topping
I’ll be the first to admit my younger children are fussy, especially my 5-year-old. Anyone else have one or more of ‘those‘ kids? Planning meals around her distinct tastes have become a challenge for me. As much as I want her to try new things, I’ve decided to take a different approach. The approach includes building off of what she will actually eat and incorporating these foods into a variety of different recipes.
Take for example oatmeal. Yes, she’ll actually eat homemade oatmeal for breakfast or even lunch. This led me to make Breakfast Cookies, which contain, you guessed it…oatmeal. These offer her another option for breakfast or snacking.
My newest creation geared toward my little fussy eater resulted in these wonderful Applesauce Muffins with Streusel Topping. Apples in most forms are another food item she actually enjoys. Within these tasty muffins, I added both applesauce and grated apple, pretty smart, huh?
Even though these muffins aren’t too sugary, they satisfied her request for a snack after dinner with no problem. Happy mom here!!!
This approach of including foods my daughter will eat in a variety of different recipes has helped me not stress about wasting food due to a fussy eater. I’m frugal and wasting food is a huge pet peeve of mine, plus I’m feeding a large family so I’m always conscious of my budget and ways to save money. Applesauce Muffins with Streusel Topping

Ingredients
For the muffins:!
- 2 cups whole wheat white flour
- 1/2 cup brown sugar
- 1 T baking powder
- 1/2 t salt
- 1 egg
- 2/3 cup milk
- 1/4 cup vegetable oil
- 1/2 cup applesauce
- 3/4 cup shredded cooking apple (such as Granny Smith and/or McIntosh), packed
For the streusel topping:!
- 1/3 cup brown sugar
- 2 T white whole wheat flour
- 1 t cinnamon
- 1 T cold butter
- 1/3 cup oats
Instructions
- Prepare streusel topping: In small bowl, combine brown sugar, flour & cinnamon. Cut in the cold butter until mixture is coarsely combined. You can use a pastry blender or 2 knives. Stir in oats. Set aside.
- Preheat oven to 400° degrees.
- Combine flour, brown sugar, baking powder and salt. Make a well in center. Beat egg, milk and oil in a small bowl. Add applesauce & grated apple, stir together. Pour into well and stir until just moistened.
- Spray 12 muffin cups with cooking spray or use muffin liners. Fill cups 3/4 full. Sprinkle streusel topping over batter in each cup.
- Bake 15-20 minutes, until golden and toothpick inserted in center of muffin comes out clean.
- Let stand 5 minutes, before removing to a wire rack to cool.

Wow – what a beautifully, rustic, homestyle muffin! I much prefer muffins over cupcakes – they’re less sweet and less cumbersome not having to deal with the need to decorate. A streusel topping is the perfect solution to that. 🙂

The Streusel toppiing is a winner in this recipe. I almost add the streusel to any kind of muffin I am baking as that just enhances the flavor of the muffin. Wheat flour with the apples is a great combination!
