Cilantro Lime Slow Cooker Whole Chicken came to me one day when I was trying to figure out something different to do with an oven roaster chicken I bought.  I knew that we loved my Cilantro Lime Marinade, but I didn’t feel like having the roaster grilled on the grill – so I decided to try it in the slow cooker.  Let me tell you – it’s delish.

I used this as a freezer meal – here’s a hint – if you’re doing that make sure to buy a smaller roaster – around 4 pounds – otherwise the bag may be a struggle.  If you’re not doing it as a freezer meal go ahead and get whatever size will fit in your slow cooker!

This meal was a snap to put together, and isn’t that what we all want?  A tasty dinner that we don’t have to slave over?  I served it with steamed broccoli and cauliflower and voila – dinner was easy that night.

Ingredients

• 1 4-5 pound oven roaster
• 2 limes, halved
• 1 C Soy Sauce
• 1/4 C brown sugar
• 1/4 C Vegetable Oil
• 1 1/2 C cilantro, chopped
• 1 jalapeno, chopped
• 1/2 onion, chopped

Instructions

1. Mix all ingredients except chicken together
2. Freezer Instructions
3. Place chicken in freezer bag (ready to cook)
4. Pour Marinade over chicken and seal bag
5. Partially thaw in refrigerator over night
6. Cooking Instructions
7. Place chicken and marinade (from freezer bag or fresh) into slow cooker
8. Cook on Low for 6-8 hours until meat is completely cooked
