I love taco salad – it’s definitely a favorite here at our house. I usually make it with ground beef, but after the last time that I made Green Chili Pork Taco’s I had a lot of meat left over and didn’t feel like tacos again…so I decided to use it in a Taco Salad! Pork Taco Salad turned out REALLY yummy and I’m sure you’ll enjoy it! Pork Taco Salad is awesome and your whole family will gobble it up!
I also loved making the meat 1 time and have 2 separate meals out of it! 4 pounds of pork is A LOT OF TACO’s! So instead I used about a pound of meat in the salad. I think it will become a regular on our rotation.
Pork Taco Salad is one of those meals where you don’t have to be extremely careful on measuring. If you like more onions – add more. If you like no onions – that’s ok too. Adjust it to you and your family!!! You know what your family likes – I customize mine on who’s eating with us 🙂
It’s also easy to make Pork Taco Salad into a healthier meal (this one is medium at best). Use a mix of healthy greens (i.e. spinach and arugula) instead of the romaine and iceburg mix. Cut down on the cheese and dressing and you have a pretty healthy dinner.
