Frosted Mint Chocolate Chip Brownies
Chocolate and mint are a flavor combo that is almost as good together as chocolate and peanut butter in my book. I’m a huge fan of chocolate desserts, especially brownies. Plunk a brownie down on a plate and give me a cup of coffee alongside, happy lady right here.
Just in time for the upcoming St. Patrick’s Day feasting, I introduce to you Frosted Mint Chocolate Chip Brownies. A delightful dessert that gives you just enough chocolate and just enough mint that it’ll make your heart sing a wee Irish tune.
I have oodles of brownie variations I’ve made over the years, you can find them all by clicking HERE. This isn’t an overly complicated brownie recipe, especially since the frosting is store-bought and doctored up to taste “semi-homemade”.
If you have the time, by all means, whip up a tasty buttercream or a cream cheese frosting and add in some peppermint extract. It’ll be delish.
What ingredients do you need to make Frosted Mint Chocolate Chip Brownies?
- Chocolate chunks
- Butter
- Unsweetened cocoa powder
- Light brown sugar
- Eggs
- Vanilla extract
- Peppermint extract
- Salt
- Mini chocolate chips
- Vanilla frosting
- Green food color
Some tips for making Frosted Mint Chocolate Chip Brownies:
- Yes, you can make homemade vanilla frosting for these. This option uses store-bought as a quicker option.
- Yes, you can make a packaged brownie mix, no problem.
- Want to add more festive touches for St. Patrick’s Day? Pile on the sprinkles!
- Line the bottom of your baking pan with parchment paper for easy removal.
- If the brownie edges are getting a bit too crisp while baking, you can always cover the pan edges with a bit of aluminum foil.
- Refrigerate after serving.
Simple steps for making Frosted Mint Chocolate Chip Brownies:
Preheat oven to 350°. Prepare an 11×7 baking dish with non-stick cooking spray.
In a large microwave-safe bowl add butter and bittersweet chocolate chunks. Place in microwave and heat in 15-30 second intervals, stirring frequently until melted. Remove from microwave.
Gradually stir in unsweetened cocoa powder, stirring well. Next, add in the light brown sugar and flour, mix well.
Next add in: vanilla extract, peppermint extract, eggs, and salt. Thoroughly combine.
Stir in 1/2 of the mini chocolate chips. Pour brownie batter into prepared pan. Bake for approximately 25 minutes. Brownies are done baking with a toothpick inserted comes out mostly clean.
Allow brownies to cool completely before frosting. Once cool, spread the frosting evenly onto brownies and sprinkle with remaining mini chocolate chips.
For frosting:
In a large bowl combine frosting, butter, salt, and peppermint extract. Mix well. Add in food coloring, begin with 2 drops and add additional as desired.

- 8 Tablespoons butter, softened
- 1/2 cup unsweetened cocoa powder
- 1.5 cups light brown sugar
- 3/4 cup all-purpose flour
- 1 Tablespoon vanilla extract
- 1 Tablespoon peppermint extract
- 3 eggs
- 1/2 teaspoon salt
- 1/2 cup mini chocolate chips
Frosting
- 2 16oz containers vanilla frosting
- 2 Tablespoons butter, softened
- Pinch of salt
- 1-2 Tablespoons peppermint extract
- 5 drops green food coloring
