Mmm, don’t you just love a good pasta salad? I’m a huge pasta salad lover and am always ready to try new versions. What I really love about pasta salads is how incredibly versatile they are.
Think about just the noodles for a minute: you can use rotini, macaroni, seashell, and so on and so forth. Then you add into the equation the dressings options: balsamic vinaigrette, Italian, or mayonnaise-based. And don’t forget the add-ins, you can literally (and I do) change up your favorite pasta salad every single time you make it with just an addition of something different.Today I cannot wait to share with you my newest favorite pasta salad: Thai Noodle Salad. This one takes ordinary pasta salad to a whole new level of deliciousness.
I adore peanut sauce but am not a huge fan of spicy. Flavorful is great in my book, but overly spicy isn’t my fave. Thai food with peanut sauce and just the right amount of flavor is a-okay, which is why I love the flavors in this easy to make side dish.
The basis of this delicious Thai Noodle Salad is pasta, you can choose whatever variety of pasta you prefer. I went with rotini because I like the way sauces cling and sticks into all of the spirals.
Next, you have a touch of crunch from cucumber, onion, and cabbage. Later on, you’ll add in some peanuts for even more crunch and texture.

Now comes the peanut sauce. Of course, you can use a store-bought version, that’s perfectly fine. But, I have included a recipe for you to make your own, and I think you’ll love it.
Mix all of the yummy ingredients together and you have yourself a spectacular Thai Noodle Salad just perfect for summertime dining. Serve at a BBQ, it goes well with grilled chicken or even salmon.
What ingredients do you need to make Thai Noodle Salad?
- Noodles
- Cabbage
- Cucumber
- Cilantro
- Green Onions
- Sesame Oil
- Peanuts
- Peanut Sauce: Peanut Butter, Rice Vinegar, Soy Sauce, Sesame Oil & Water
Some tips for making Thai Noodle Salad:
- Use whatever variety of noodles you desire.
- Buy a bagged coleslaw mix instead of chopping cabbage.
- Store-bought Peanut Sauce works well, you may need to thin with some additional water.
- Top with Sriracha Sauce or cracked pepper for additional flavor.
Simple steps for making Thai Noodle Salad:
Cook pasta according to package instructions. Drain pasta, top with sesame oil, and set aside.
Chop cucumber, cilantro, and green onions. In a large bowl, combine pasta with cabbage and cucumber.
Prepare Peanut Sauce. Top with peanut sauce. Mix well
Stir in cilantro, green onions, and peanuts.
Garnish with sriracha sauce & cracked black pepper, if desired.

Ingredients
Noodle Salad
- 10 oz pasta, cooked & drained according to package directions
- 2 Tablespoons Sesame Oil
- 2 cups coleslaw/cabbage mix
- 1/2 cup cucumber, chopped
- 2 green onions, sliced
- 1/3 cup cilantro, chopped
- 1/4 cup dry roasted peanuts
Peanut Sauce
- 1/2 cup peanut butter
- 6 Tablespoons Rice Vinegar
- 1/4 cup Soy Sauce
- 2 Tablespoons Sesame Oil
- 1-2 Tablespoons Water, depending on consistency of sauce
Instructions
Cook pasta according to package instructions. Drain pasta, top with sesame oil, and set aside.
Chop cucumber, cilantro, and green onions. In a large bowl, combine pasta with cabbage and cucumber.
Prepare Peanut Sauce by mixing ingredients together in a bowl, add enough water to achieve desired consistency. Top with the salad with peanut sauce. Mix well.
Stir in cilantro, green onions, and peanuts.
Notes
Garnish with Sriracha Sauce & cracked black pepper, if desired. Refrigerate if not serving immediately.
