Chocolate Peppermint Sno-Cap Cookies
The baking season kicked in on full-steam ahead this week at my house. The temps dropped starting on Halloween. Yup, we tricked and treated in rain/sleet/flurries and ever since then it has been cold. Which has sent me into the kitchen for some baking.
I have to tell you that the cookie that I’m introducing today came about on a trip through the candy aisle at Walmart. I was looking for a concession size box of Reese’s Pieces for a recipe and my eyes spotted a box of SNO-CAPS!You remember SNO-CAPS right? They were my favorite movie treat when I was a little kid. Truthfully I can never remember eating them outside of a theatre, but hey if I can buy a package at Walmart that’s a beautiful thing.
This recipe is very simple, and with the addition of peppermint extract, they have a fun pepperminty taste. My kids had never had SNO-CAPS and thought I had purchased fancy chocolate chips.
True story, mom doesn’t buy candy at the movies so they had no idea SNO-CAPS existed. Guess we’ll be popping into Walmart before we head to the movies next time and grabbing some concession sized boxes of all our favorite candy.
What ingredients do you need to make Chocolate Peppermint Sno-Cap Cookies?
- Flour
- Cocoa
- Baking Soda
- Salt
- Butter
- Brown Sugar
- Granulated Sugar
- Peppermint Extract
- Egg
- SNO-CAPS Candy
Some tips for making Chocolate Peppermint Sno-Cap Cookies:
- Reserve a portion of the SNO-CAPS if you’d like to place some on top of the dough before baking for a pretty look.
- I found a concession sized box of SNO-CAPS in the candy aisle at Walmart.
- Not a fan of peppermint, substitute the peppermint extract for vanilla extract.
- Store cookies in a resealable container after completely cooling.
Simple steps for making Chocolate Peppermint Sno-Cap Cookies:
Preheat oven to 350° degrees.
In a mixing bowl combine flour, cocoa powder, baking soda, and salt. Set aside.
In a separate bowl beat butter and sugars together with an electric mixer.
Add in peppermint extract and egg. Beat to combine.
Gradually add in flour mixture, thoroughly combining.
Stir in SNO-CAPS.
Scoop dough onto prepared pan. Bake 9-11 minutes. Remove from oven and allow to cool 2-3 minutes before transferring to wire rack.
