And just like that, we’ve found ourselves cruising right along through autumn with all of the festivities of the holidays quickly approaching. The leaves are falling fast from the trees in my yard, yet the weather is predicting snow flurries later this week.
Winter is definitely on its way and with it the holiday season! This year is extraordinarily busy for our family. I’m looking for all sorts of shortcuts and easy recipes to keep things easy yet tasty during this busy season.
In the short matter of three weeks in December/January we have a daughter graduating from college 10 hours away, Christmas and the same daughter’s wedding. Yes, my head is spinning just thinking about how much has to happen in such a short time frame during the BUSIEST time of the year for everyone.
I’ll push onward and get things done, but I’ll deserve a sweet treat or two more than ever. And that brings me to the deliciousness that I’m serving up today: Chocolate Peppermint Cookies & Cream Bundt Cake. Every holiday season needs a little cake, right?
What I adore about this homemade cake is the size. It is a small bundt cake which is the perfect size for 4 servings! Even during the holidays, not every occasion needs a huge amount of dessert. Sometimes, a small evening with a couple of girlfriends watching Christmas movies just needs a smidge of chocolate cake.
Of course, I had to add a touch of peppermint since it is one of the most beloved flavors during the holiday season. Chocolate and peppermint are such a great flavor pairing. But let me tell you I took that flavor pairing to the next level of delicious with the addition of Torani Cookies & Cream Sauce.
You read that correctly, Torani Cookies & Cream Sauce. I picked up a bottle in the cocoa aisle at Walmart! Made with real, simple ingredients like pure cane sugar & natural flavors it makes a great addition to so many holiday favorites.
I amped up the flavor of a homemade chocolate cake with the addition of Torani Cookies & Cream Sauce not only in the batter but as a finishing drizzle on top of the cake. And with the addition of peppermint, pure bliss!
Torani Cookies & Cream Sauce is easy to use- simply drizzle on top of desserts or add a spoonful to your coffee, cocoa, latte, etc. Trust me, you’ll find yourself adding it to everything from a stack of pancakes to hot cocoa. It’s amazing how one flavor can create countless recipes.
What ingredients do you need to make a Chocolate Peppermint Cookies & Cream Bundt Cake?
- Flour
- Cocoa Powder
- Salt
- Baking Soda
- Butter
- Brown Sugar
- Granulated Sugar
- Vanilla Extract
- Peppermint Extract
- Egg
- Torani Cookies & Cream Sauce
- Buttermilk
- Crushed Peppermint Candy
Some tips for making a Chocolate Peppermint Cookies & Cream Bundt Cake:
- I used a 6″ bundt pan.
- Spray the pan generously with non-stick cooking spray.
- No buttermilk? Use regular milk with the addition of a 1/2 teaspoon of vinegar. Allow to sit for 5 minutes. Stir well and add to the recipe as directed.
- Add Torani Cookies & Cream Sauce and crushed peppermint just prior to serving.
Simple steps for making a Chocolate Peppermint Cookies & Cream Bundt Cake:
In a bowl combine: flour, cocoa powder, salt, and baking soda.
In a separate bowl beat butter. Add in brown sugar and granulated sugar beat until creamy. Add extracts and egg, beat until combined.
Add in Torani Cookies & Cream Sauce. Mix well.
Alternate mixing in dry ingredients and buttermilk. Beginning and ending with dry ingredients.
Spoon into prepared pan. Bake at 350 degrees for approximately 20-25 minutes until a toothpick inserted near the center of the cake comes out clean.
Cool completely prior to removing the cake from pan. Just prior to serving, drizzle with Torani Cookies & Cream Sauce and sprinkle with crushed peppermints.

Ingredients
- 1/2 cup all purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- 1/4 cup butter, softened
- 1/4 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon peppermint extract
- 1/8 cup Torani Cookies & Cream Sauce*
- 1/4 cup buttermilk
Toppings
- Torani Cookies & Cream Sauce*
- Crushed Peppermint Candies
Instructions
Preheat oven to 350° degrees. Spray pan with non-stick cooking spray.
In a small bowl combine flour, cocoa powder, salt, and baking soda.
In a mixing bowl beat butter. Add in brown sugar and granulated sugar. Beat until creamy.
Add in egg, vanilla extract and peppermint extract, mix to combine.
Add in Torani Cookies & Cream Sauce, mix well.
Alternate mixing in dry ingredients and buttermilk. Beginning and ending with dry ingredients.
Spray pan with non-stick cooking spray.
Spoon batter into prepared pan.
Bake approximately 20-25 minutes.
The cake is finished cooking with a toothpick inserted near center comes out clean.
All to cool prior to removing from pan.
