Autumn Orzo Salad with Coconut Orange Dressing
Fall flavors are hitting my kitchen with a fury! I simply adore all the flavors associated with autumn. Whether sweet or savory there are so many delicious ways to enjoy the bounty of this amazing season.
There’s still time to head to the farmers market and take in some of the fantastic items available and incorporate them into your mealtimes. I’ve really been concentrating on adding in additional plant-based options to my menu plan.
One such dish that has become a favorite for lunch, a light meal or even a side dish is Autumn Orzo Salad with Coconut Orange Dressing. I’m always striving to make dishes which can be sent in lunches. I have an adult son who will happily take leftovers for his lunch each day, which means I need to keep satisfying dishes available.
Autumn Orzo Salad with Coconut Orange Dressing is such an easy recipe, it can be assembled in no time at all. It was made simple and delicious with the help of a shopping trip to Target. There I headed to the refrigerated grocery section and picked up Silk Dairy Free Yogurt Alternative & So Delicious Dairy Free Coconutmilk.
Okay, so I’ll be honest. I was at Target, after all, you just know that there was more that went into my shopping cart. Oh Target, you just get us, right?
Both Silk Dairy Free Yogurt Alternative & So Delicious Dairy Free Coconutmilk are favorites in my house. I decided to combine So Delicious Dairy Free Coconutmilk and orange juice for a refreshing dressing for this tasty salad. It pairs so nicely with the other ingredients which consist of baby greens, orzo, cubed butternut squash, dried cranberries, and slivered almonds.
Salads such as this are a wonderful way to add in additional plant based foods into your life. I find if I purchase more plant based products that we eat them more. Funny how that works! love finding ways to creatively incorporate them into my kids lives too. I’ve been a mom a long time, creativity and motherhood just go hand in hand.

Serve over additional baby greens if desired. Start with 1/2 of the dressing and add more as orzo absorbs liquid.Autumn Orzo Salad with Coconut Orange Dressing
