I adore this recipe for Soft Ginger Cookies, there I said it! My kids love these because they are not overpowering in the ginger department, but also not just your run-of-the-mill sugar cookie.
Kept in an airtight container they stay fresh, soft, and chewy for days. But trust me they won’t last that long!I’m not a fan of super crunchy cookies, soft cookies are where my heart wanders off to. Now don’t get me wrong I’ll happily dunk a traditional crunchier gingerbread cookie into my coffee during the holiday season. But…if I had my way I’ll choose a softer variety.
What I really enjoy about this recipe is that you don’t need to refrigerate the dough. My traditional gingerbread dough needs refrigeration prior to rolling out for cutting. No need with this dough, you’ll be enjoying a gingery cookie in no time.

What ingredients do you need to make Soft Ginger Cookies?
- Flour
- Baking Soda
- Salt
- Spices: ground ginger, cinnamon & cloves
- Butter
- Sugar
- Egg
- Orange Juice (see below)
- Molasses
Some tips for making Soft Ginger Cookies:
- I used a 1.5″ cookie scoop for uniform sizing.
- Use parchment paper or a silicone baking sheet for easy cleanup.
- Spray your measuring cup with non-stick cooking spray when measuring the molasses, it will slide right out.
- As stated above this recipe was from a previous contributor. She listed Orange Juice in the ingredients, you may omit this item with no issues. I personally did not use it.
- Store cookies in a resealable container.
- I used the bottom of a glass dipped in sugar to slightly flatten cookies prior to baking. You can also roll the cookie dough (after using a cookie scoop) in a small amount of sugar prior to flattening.
Simple steps for making Soft Ginger Cookies:
Combine & sift together: flour, baking soda, salt, and spices. Set aside.
In a separate bowl using an electric mixer cream together butter and sugar, until light and fluffy.
Add the egg and orange juice, mix thoroughly.
Add molasses and combine thoroughly.
Slowly add in the dry ingredients, mixing well.
Use a cookie scoop to measure the dough. Roll scooped dough in hands to form a nice ball. Place the ball in small bowl of sugar and roll around until coated. Place onto a prepared baking sheet.
Flatten dough prior baking using a glass dipped into sugar.
Bake at 350 degrees F, for approximately 8-10 minutes. Cool on wire rack.

Ingredients
- 2 ¼ cups all-purpose flour
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 1 teaspoon ground cinnamon
- 2 teaspoons ground ginger
- ½ teaspoon ground cloves
- ¾ cup butter , softened
- 1 cup + 2 Tablespoons sugar
- 1 egg
- 1 Tablespoon orange juice
- ¼ cup molasses
Instructions
Preheat oven to 350° degrees F.
Combine & sift together: flour, baking soda, salt, and spices. Set aside.
In a separate bowl using an electric mixer cream together butter and 1 cup sugar, until light and fluffy. Add the egg and orange juice, mix thoroughly.
Add molasses and combine thoroughly.

Notes
I used a 1.5" cookie scoop. As stated above, this recipe is from a previous contributor, she includes 1 Tablespoon of Orange Juice in the ingredients. You can omit this ingredient with no issues.
