This almost no-bake pie is easy to prepare and oh so yummy!

My daughter Madison’s 16th birthday rolled around recently.  Yes, this is the daughter who does not like chocolate, no way, no how, she does not like it!  So, when it came time for her to decide what type of birthday dessert she’d like this year (yes, we all get to choose what we want for our birthday dessert) she said “Peanut Butter Pie“. No problem, mom will hook you up!

This is a mostly “no bake” dessert, the crust only bakes for a matter of 10 short minutes, and if you are really pinched for time, use a store-bought graham cracker crust.  You can also use chunky peanut butter but we prefer smooth around here. Now, if I’m plating a piece of this pie for anyone other than said birthday girl, I always add a touch of chocolate sauce, because I am a chocolate & peanut butter addict. You can’t go wrong with a dollop of homemade whipped cream either! Enjoy!

Yield: 8 servings

Creamy Peanut Butter Pie

For Crust:

  • 9 whole graham crackers, crushed
  • 6 T butter, melted
  • 1/2 cup sugar

For Filling:

  • 1 pint heavy whipping cream
  • 2 T confectioners sugar
  • 8 oz cream cheese, softened
  • 1 1/4 cup creamy peanut butter, divided

  1. Preheat oven to 300 degrees.
  2. Spray pie pan with non-stick cooking spray.
  3. Crush graham crackers, using preferred method. I normally use my food processor, but in a pinch a re-sealable plastic bag & a rolling pin will work just fine.
  4. In mixing bowl combine crushed graham crackers, melted butter & sugar, use a fork to mix.
  5. Dump into pie pan and pat down evenly, make sure to spread up the sides of pie pan just a bit.
  6. Bake for 10 minutes and then cool thoroughly.
  7. While crust is cooling, whip heavy whipping cream and confectioners sugar until light and fluffy.
  8. In separate bowl beat cream cheese until light and fluffy, add 3/4 peanut butter and continue to beat until combined.
  9. Fold whipped cream into cream cheese/peanut butter mixture until well blended together. Set aside.
  10. In microwave safe bowl, add remaining 1/2 cup peanut butter. Microwave approximately 30 seconds until melted.
  11. Pour melted peanut butter over cooled graham cracker crust spreading evenly. Refrigerate 10-15 minutes until cooled and slightly hardened.
  12. Spoon peanut butter filling into pie pan, spreading to edges. Refrigerate until ready to serve.
  13. Optional: whipped cream on top or chocolate sauce

**This makes one very large pie or two smaller pies. My pie pan is a deep dish pie pan, if you are using a standard pie pan I would suggest making 2 pies or half the recipe.**

This pie is almost no-bake, easy to prepare and oh so yummy!!!

  8. I am a peanut butter fanatic and love peanut butter pie. Mine is pretty much the same recipe except for that layer of melted peanut butter! WOW! Totally elevated it. Although, I wasn’t planning on making it and didn’t have any heavy whipping cream, so I used a tub of Cool Whip I had in the freezer. So yummy.

  9. I just made the creamy peanut butter pie. Does anyone know if this could be frozen? If so, would there be any special instructions? I am going to take this to a house party in 3 days, will it keep or should I freeze it. Thanking you in advise for your help.
