The calendar has now turned to November! This officially begins the “holiday season”, with Thanksgiving approaching in just a few short weeks. No matter what day we host Thanksgiving the days following are sure to be filled with lots of leftover turkey. Doesn’t matter how much I send home with the older kids we’re always left with enough for a few meals ourselves. I’m sharing with you a simple recipe today that uses leftover turkey and won’t leave you feeling stuffed! Turkey & Apple Salad is a spin on chicken salad, but with flavors my family personally enjoys. Big tender pieces of leftover turkey, chunks of crisp apple, dried cranberries for a bit of tartness all mixed together with some plain yogurt. Add in a touch of seasonings if desired and serve in Kangaroo Pita Pockets.
