Why am I so excited? EASY. My now 6 year old has been obsessed with those adorable minions for years. It’s the first character that he seemed to totally love, and they still can make him giggle like no other. My 6 year old isn’t fantastic with his words, but for minions? I want to make Minions movie night special at our house – my 6 year old (almost) demands it. So I had to practice. We’re having a viewing party and it’s going to be so fun. Of course a viewing party requires a few fun snacks right? And goggles all the little minions needed some goggles…but Of course we needed food. I decided to make Fruit Sushi Rolls because yes that’s so fun right? Finger food is where it’s at in my house, and Fruit Sushi was on my mind. (If you need the recipe in printable form it’s at the bottom).
First you need 8 ounces of cream cheese (softened) and 4 ounces of strawberry banana (hahah yes banana) yogurt. Blend them together (hint I always beat the cream cheese first). Set your mix aside and cut up some fruit. I used a Strawberry Kiwi combo for one roll and a Orange Banana combo for the other.
You’ll need sweetened coconut flakes for this part (a bunch or a little up to you – it’s the “rice” of the sushi) and tortillas. Take a tortilla and spread the cream cheese/yogurt over whole thing. I generously added coconut. (I’ll give you a hint – if you want a super tight sushi roll use less ingredients than me – I didn’t care and wanted every bite to be yummy. I’m not a professional sushi roller but I don’t have any leftovers – so it must have been delish).
Top coconut with desired fruit and roll up tightly. I found that it really helped to refrigerate the rolls at this point if you wanted them to stick together as you cut. Before serving cut the ends off so you have a delightful sushi roll. Serve to your favorite people and they will love you for it.
Movie Night with Fruit Sushi Rolls
Ingredients
- 8 ounces cream cheese, softened
- 4 ounces strawberry banana yogurt
- fruit sliced (strawberries, bananas, oranges and kiwi worked great)
- shredded, sweetened coconut
- tortillas
Instructions
- Mix together cream cheese and yogurt (beat cream cheese first)
- Spread cream cheese/yogurt mix onto tortillas.
- Top with coconut
- Place fruit on top of coconut and roll up tortilla tightly
- Optional - refrigerate rolls for about an hour before serving
