Slow Cooker Spicy Peanut Beef is a recipe that I was inspired with by Lori here at Who Needs a Cape? Her Slow Cooker Thai Pork with Peanut Sauce is AMAZING! I made it for my collection of 30 meals in 3 hours (Lori made it in her 7 meals in 1 hour). If you like slow cooker meals (and freezer meals) you need to go check those out. YUM!
I took Lori’s recipe and changed a few things, but kept the idea the same. A nice delicious meal that isn’t a roast (hey roast is great in the slow cooker – but there are SO MANY more things that your slow cooker can do!). I like the idea of getting an Asian flair out of the slow cooker – spicing things up a bit. You can definitely heat this meal up even more by adding more Sriracha (in case you’ve never used it – Sriracha is found usually in the Asian food aisle of your grocery store. It’s a spicy Asian ketchup almost). You could tone it down by adding a bit less. Up to you. And I didn’t (only because I didn’t have any) but you could add some crunch to your meal with some chopped peanuts on top.
I served this over egg noodles, but if you want to stay in the Asian idea of dinner – use rice for sure!
One more thing – this would make a great freezer meal!
