I love having quick and easy dinner options that I can throw together in a flash. We all have those weeks where we just cringe looking at the calendar. This whole month is looking like that, no complaints though it’s all fun stuff it just makes for incredibly busy dinnertimes.
Not every day can be a drive-through or pizza night. One, it doesn’t fit into the budget, and two, I can only handle so much ordering out. I’d prefer to make dinner, even if it is super simple and uncomplicated.
We ate a ton of flatbread pizza when back two years ago when we were staying home and businesses were closed due to certain restrictions. You know the timeframe I’m referring to.
I would head to Aldi once or twice a month to restock our essentials and we found ourselves using their flatbread in lieu of pizza dough. It gave us our “pizza fix”, it also allowed me to create a bunch of varieties, suiting everyone’s tastes.
Today’s Barbecue Chicken Flatbread Pizza is one of those flavor options. It is a great variation on traditional pizza and is one that like so many of our family’s favorite recipes, is completely customizable.
What I like about this recipe, in particular, is that you can prep much of the recipe ahead of time, making it perfect for busy weeknights. I’m providing instructions in the recipe card below if you’d like to bake your chicken breasts. This step can be easily done ahead of time.
Serve alongside a simple salad, and you have a simple family dinner. Don’t forget you can make this for a family movie night or book club as a tasty appetizer too.
What ingredients do you need to make this recipe?
- Chicken breasts
- Olive oil
- Seasonings
- Barbecue sauce
- Colby-Jack cheese
- Artisan Flatbread (sometimes found in the deli section)
Customize this recipe by adding any of the following, or your favorites:
- Sliced red onion
- Bacon
- Caramelized onions
- Mozzarella cheese
- Chopped basil
- Ranch dressing
- Banana peppers
Timesavers that will help you get this meal on the table quickly:
- Bake the chicken breasts ahead of time.
- Season chicken breasts with whatever seasoning you prefer.
- Use leftover grilled chicken.
- Buy a rotisserie chicken and cut it into pieces.
- If using chunk cheese, shred ahead of time.
Step by step directions:
Preheat the oven to 375° degrees Fahrenheit. Drizzle half the olive oil on the baking pan. Place the chicken breasts in the olive oil on the baking pan. Drizzle the other half of the olive oil over the chicken breasts. Cover the chicken breasts with salt and pepper.
Bake the chicken breasts for 30 minutes. The internal temperature should read 165ºF. Once the chicken is cooked use two forks to shred the chicken.
Spread half of the barbecue sauce on the bottom of each of the artisan flatbreads (the bottom is the flat side). This will allow the textured side to be flaky.
Cover each of the artisan flatbreads with half of the shredded chicken.
Sprinkle the shredded cheese over the shredded chicken for both artisan flatbreads. Next, sprinkle the oregano over the shredded cheese for both artisan flatbreads.
Bake the prepared pizzas for 7 minutes directly on the grates in the oven. Can be cooked longer if you want a crispier flatbread. Remove from the oven, allow to cool 2-3 minutes then cut into squares.
