Strawberry Cheesecake English Muffins with Balsamic Glaze
With all the summer berries in abundance, I’ve been trying to get creative and find new and delicious ways to use them in all kinds of recipes. Strawberries are one of my family’s favorite fruits to enjoy. Last year, I took my youngest girls out strawberry picking at a local patch, we had so much fun “taste-testing” while we picked.
Of course, I can make the traditional strawberry desserts that are known and loved, but I wanted to make something fun and creative that took strawberries to another level of yum.
I thought why not take a delicious Thomas’ English Muffin and use it as the base for a desserty-creation? Pretty smart, huh? Strawberry Cheesecake English Muffins with Balsamic Glaze began taking shape in my head.
The nooks and crannies texture that Thomas’ English Muffins are known for are perfect for capturing more of all the goodness we’re about to pile on top of them. Thomas’ English Muffins certainly aren’t just for breakfast either. You can use them for lunch, dinner, snacking and dessert time. I buy them at Walmart in the bread aisle, and in my home, we enjoy them any time throughout the day.
The next part of my delicious dessert creation is the “cheesecake” layer. This is simply packaged strawberry cream cheese. The next component is chopped strawberries and lots of them. Every cheesecake has a graham cracker crust, so a tiny bit of crushed graham cracker added just the right touch. And to top it off, a drizzle of Balsamic Glaze – YUM!.
Let me tell you, I have a new favorite dessert treat! This recipe is so simple to make and tastes fantastic. I just know once you’ve tried it, you’ll be hooked like we are.
The wheels are already spinning on what other dessert creations I can make with Thomas’ English Muffins. I’m thinking something delicious using the Cinnamon Raisin variety would be great.

Strawberry Cheesecake English Muffins with Balsamic Glaze

Ingredients
- 2 whole Thomas' English Muffins, toasted
- 4 oz strawberry cream cheese
- 1/4 cup diced strawberries, divided
- 2 Tablespoons graham crackers, crushed
- Balsamic Glaze
Instructions
Toast the 4 halves of the Thomas' English Muffins. Set aside.
In small bowl combine: strawberry cream cheese and half of the diced strawberries. Mix together.
Spread mixture onto toasted english muffins.
Sprinkle with crushed graham crackers.
Top with remaining diced strawberries.
Drizzle with Balsamic Glaze.
Notes
I purchase Balsamic Glaze in the vinegar section.
