New Year’s Eve is lurking around the corner, and with it comes the perfect opportunity for celebrating with tasty food. We don’t have huge festivities for the new year in our home, but that doesn’t mean we don’t celebrate with a delicious spread of food.
Normally our evening consists of movie watching and hanging out. I love to prepare what I refer to as “munchie” foods. You know the ones I’m talking about, foods that together basically create a meal. Slow Cooker 3 Cheese Bean Dip is the perfect addition to our New Years Eve spread. It is an easy to prepare cheese-fest that comes together wonderfully in my very favorite small kitchen appliance…my slow cooker! Don’t you just love slow cookers?
Right off the bat, the name of this dip gives away some of the delicious ingredients. Yes, there are refried beans and yes there’s 3 types of cheese, but in addition to those yummy ingredients, you’ll also add in salsa, diced green chilies and some spices (or hot sauce) to flavor to your desire. This is a no-stress dip that will liven up any New Years Eve celebration, just dump the ingredients into the slow cooker, stir and BAM…done!
This is also an easy-on-the-budget dip to bring to holiday gatherings. Inexpensive and delicious, this is definitely a win-win! After all the holiday spending leading up to Christmas I think we’re all looking for ways to enjoy New Year’s Eve without breaking the bank, wouldn’t you agree?

Slow Cooker 3 Cheese Bean Dip
Ingredients
- 1 14 oz can refried beans
- 8 oz cheese spread, cubed
- 4 oz cream cheese, cubed
- 1/2 cup salsa
- 2 oz diced green chilies
- 8 oz colby-jack cheese, shredded
- 1 t cumin
- 1 t chili powder
- OPTIONAL: hot sauce/sriracha/cayenne pepper
Instructions
- Spray slow cooker with non-stick cooking spray.
- Add ingredients in order listed. Place lid on slow cooker, turn onto low setting and cook 2 hours. Stir after 1 hour.
- When ingredients are melted together, turn to warm setting.
Notes
You can easily double or triple this recipe if you are feeding a larger crowd.
