Chorizo sausage is packed full of seasonings and adds a huge amount of flavor to “Mexican” inspired dishes. You can find it in most larger meat sections in grocery stores. If you’d prefer you can omit the sausage, or simply add in cooked ground beef or pork that’s well seasoned.

Creamy Chorizo Bean Dip

Prep Time: 10 minutes

Cook Time: 25 minutes

Yield: 6-8 servings

Creamy Chorizo Bean Dip

Ingredients

  • 14 oz can refried beans
  • 8 oz cream cheese, softened
  • 1/4 cup sour cream
  • 1 t ground cumin
  • 8 oz package of Chorizo sauage , cooked according to package directions
  • 1 cup Queso Quesadilla cheese or Mexican blend cheese, shredded
  • Mission Organics® Blue Corn Tortilla Chips

Instructions

  1. Preheat oven to 350 degrees. Cook Chorizo according to package directions, set aside.
  2. Spray baking dish (I used a glass pie pan) with non-stick cooking spray.
  3. With electric mixer combine: refried beans, cream cheese, sour cream & ground cumin until mixed together. Stir in cooked Chorizo.
  4. Spread into prepared pan, top with shredded cheese.
  5. Bake approximately 20-25 minutes or until cheese is melted and lightly browned.
  6. Serve with Mission Organics® Blue Corn Tortilla Chips.
