Have you ever needed a dessert in a pinch? Maybe a friend unexpectedly drops in, you get invited to a neighbor’s house for coffee, your mother in law is in the area and pops over. Whatever the reason, I have such a simple dessert to share with you today. A super easy to prepare 3 Ingredient Mixed Berry Cobbler, yes only 3 ingredients! This is a dessert that you can literally throw together in 2 minutes, pop into the oven and be done. I don’t like feeling unprepared, there’s something unsettling about it. With a little bit of help from my pantry and freezer I have the ingredients readily available to handle an unexpected situation that requires dessert.

First lets head to our pantry shall we? Keeping an essential bag or two of Van’s® Granola Clusters on the shelf is just plain smart. With wholesome ingredients you’ll feel good about not only eating this granola but also adding it as a topper to a fruit cobbler. Smart, right? Soft, chewy baked granola bites that are densely packed with whole grains. Perfect for snacking, using as a topper or popping onto yogurt, we love the Blueberry Walnut variety but the Cranberry Almond is surely a close second.

We found these two delicious varieties while shopping at our local Meijer store. They carry a huge selection of Van’s® products which contain fresh, simple ingredients and are gluten-free. Did you know that May is Celiac Awareness Month? We personally have both friends and family who have Celiac Disease, so we are very aware of foods that are gluten-free. Be sure to check with your local Meijer store as select locations are hosting in-store demos on May 29th in conjunction with Celiac Awareness Month.

Also, don’t forget to check out Meijer mPerks for great money-saving offers too!

The next ingredient in this cobbler is a bag of frozen mixed berries. An absolutely wonderful ingredient to keep on hand for a variety of reasons, and cobbler being one of them. All you do is mix the frozen berries with some flour and you have the fruity basis for this simple dessert. Finish this dessert with a nutritious topper such as Van’s® Blueberry Walnut Granola Clusters and you’re done. Bake, allow to cool and if desired add a creamy dollop such as homemade whipped cream, vanilla ice cream or yogurt. This is a fantastic gluten-free dessert that’s a snap to make.
